What is for dinner? Monday!

 I am super chill today. Not sure why. Maybe cuz I have a sundress on? Dunno.

Anyhoo...I'm going to go home and cook my chilluns some supper. (Yes, supper)

I am thinking maybe spaghetti? Anyway...after whatever we eat, we are going to the lake to walk.

Then I am coming home and continuing on my quest to get everything that cna be unpacked out of boxes!!!

Heres what else I had today:

1. Iced coffee, 2 bites of sausage biscuit
2. Click Frappe (45g protein)
3. Tuna salad in a whole wheat pita (about 21-ishg protein)

So what's on YOUR plate today?

I'm going to try out a new curry tofu recipe. I half made it up lol. I tried some the other day from our wegman's vegetarian bar and it was amazing, but i wanted a healthy version. I made it last night, hopefully it tastes ok!

Not to hijack but I made your taco casserole this weekend with a few adjustments for taste.  It was a hit with me and DH.  I didn't tell him it had squash in it and he didn't even notice!  I started to tell him when he was done but decided to just keep that under my hat. 

For dinner:   Too hot to cook and I forgot to put dinner in the crockpot this morning so it's sandwich for DH and lunch meat roll-ups for me.

You just can't give my husband taco seasoning if you want to sleep in the same room with him later.   He can run the animals out of the room. (Seriously, cats will get up from their chosen nap spot and toss him a dirty look as they leave)  Tried anti-gas products but they don't work with the spice.  If he has just beans or another gassy veggie it's great.

So nothing major really.  I put Tbsp of lime juice and a tsp dried cilantro in with the veggies.  I only had about a 1/4 cup of onion so I just tossed in about a 1/4 cup of diced green pepper.  A can of diced roasted tomatoes. Can of green chilies. 

I just used 2 zucchini because I figured he was less likely to notice the green as opposed to the yellow of the squash. 

But other than that it was the same.

Just served it as is.  I offered to bake him whole wheat tortilla to go with but he didn't want it which was great for him.  He's heavy so he doesn't need the carbs and I know I don't.  

Have the last serving for lunch today.  Yea!  

I just don't know how your daughter can resist.   

Thinking of trying it with shredded chicken...moist piece like thighs maybe.

 My daughter is the definition of a "steak and potatoes" girl.

I think she may have been switched at birth with one of Paul's children frankly. You ask what she wants for dinner and she goes "chicken" or "beef."

She only likes the following veggies: green beans, brocolli, potatoes, collard greens and SOMETIMES cauliflower. She'll eat onions but won't eat peppers at all. The only thing she likes in her salad is lettuce and MABYE shredded carrots. She is a ranch dressing fanatic but also likes balsamic vinaigrette.

Her idea of a perfect meal is fried chicken, mac 'n cheese and green beans with a roll. She only eats chili because she knows it comes with corn bread.

How I ended up with this child, I know not. But she keeps life interesting as I prepare meals!

 My meals are weird today.

Had an atkins bar for breakfast.
Had tuna salad for lunch.
Missed my snack. :(
Having a chicken pamesan salad right now.

Will have a couple hardboiled eggs here in an hour or two.
And then maybe some greek yogurt later. o.O

Not sure what meal is what. Just sort of eating randomly today.

I have just tried to rest today, my legs are so tired. I helped my mom, fixed lunch for my folks, had "the talk" with my sister (that I really really need some help now that my dad is having health issues as well) and then went to the dentist. Now staring down another 6 hours at work before I can do night chores.

B - 2 Laughing Cow Light cheese
L - Nik's Chicken Pot Pie, fresh peas / beans, peppers
S - turkey pepperoni, cheese, and yes, triscuit thins (6)
D - leftover Nik's Chicken Pot Pie, if my dad left me any. Otherwise it'll be breakfast
S - cottage cheese and SF jello w/ fruit
- I have blueberries!!! WOOT

I will be low on protein and fine on calories, so I may have a protein shake or a Quest to round out my evening.
