Um...what was for dinner?

It was a busy day today! But I had me a good dinner!

Apparently my buffalo-blue cheese tuna burger was a hit with "Diva, the Younger" because she actually ASKED for them tonight! I had no problems obliging. They take like 10 minutes to make and have less than 5 ingredients! (Recipe forthcoming on the blog)

I had a tuna burger with a slice of fresh tomato on top. I actually made a taco casserole but decided on this instead. I'll have casserole for lunch tomorrow.

Here's what else I had:

1. Click Frapp
2. 1/2 a roast beef sandwich with pepperjack cheese on a piece of 12-grain bread w/ a side salad with Asian dressing
3. McD's chipotle bbq snack wrap
4. 2 oz. peanuts (I got one of those packets of peanuts...mmmm...missed them but yeah still can't buy them for home!)
5. Tuna burger with tomato
6. I'm about to get an NSA fudgesicle in a moment

I had meatballs with spaghetti sauce and sliced cucumber with ranch dressing. I was at a friends house and shamefully I ate the dessert, cream cheese with all fruit spread (strawberry) and whole grain cereal crumbled on top with ritz whole grain crackers to dip in it. Yummy! At least there was no added sugar

Making my eggplant parmesan. Eggplant cut into 3/4 inch circles, sprayed with olive oil and broiled, then layered with marinara sauce and low fat mozzarella, then baked. Yummy. Garlic bread and pasta (for the boys), and salad.

I was SUPPOSED to have Taco casserole - no black beans or refried beans. Maybe Nik's Chicken Pot Pie? Nope, no mixed veggies. How about Tuna Burgers? Only 1 can of tuna and I was making lunch for my parents as well (my dad LOVES tuna burgers).
I'll get back on track tomorrow
This morning I walk / jogged 1 mile then swam a total of 426yd and tread water for 7 minutes. It has been a good day overall, but kind of a sucky evening at work because of medical events.

I have snacked OUT today!!!

B - mint cookie protein made w/ water
L - grilled steak, steamed squash, fresh green beans, fresh tomato
S - watermelon
- cottage cheese w/ pineapple
- turkey pepperoni / cheese / triscuit thins
D - ranch chicken, peppers w/ cheese, and a few green beans
S _ YES another one!! - QUest chocolate

All of that and I still come in under 1300 cals
I need to get something more filling... like Taco Casserole!!

Tonight for dinner, we grilled up Cubano Skirt Steak, grilled corn on the cob, and salad.  (I had steak and a little salad)

This is the first time I've had steak and it went down like buttuh... so delicious!
