Buffalo Blue Cheese Tuna Burger
Someone asked me about this in a PM so I thought I'd just post it.
The methodology is pretty much the same as my regular tuna burger recipe, that can be found here:

I also have made Thai tuna sliders:
http://bariatricfoodie.blogspot.com/2011/03/meatless-fridays-thai-tuna-sliders.html
And spicy Cajun tuna burgers:
http://bariatricfoodie.blogspot.com/2010/06/meatless-fridays-spicy-cajun-tuna.html
The ingredients for the buffalo blue cheese ones are:
4 oz. can of tuna with liquid
1/4 c. textured vegetable protein (check out any of the links above if you need to know what that is)
1 tbsp buffalo wing sauce of your choice )
1 tbsp blue cheese crumbles
a bit of onion powder, garlic powder, salt and pepper
2-ish tbsp Egg Beaters (or one egg white)
Set the tuna, liquid and TVP in a bowl for about 5-ish minutes or until the TVP has absorbed all the liquid.
Mix in the sauce, cheese and egg and spices. Mix well!
Spray down a griddle or frying pan and let it get HOT. Form the tuna mixture into patties (it will be loose) and place them in the pan. Cook for about 3-4 minutes each side.
I served with a sprinkle of shredded cheddar cheese, a thick slice of tomato and a bit of light blue cheese dressing.
