BF has had its own version of this wildly popular carb-swap for some time but then a reader sent me her yummy remix of the recipe. It even LOOKS just like potato salad. I dare you to make it and fool your friends.

I had a recipe a few years back when i was lowcarb somersizing. I actually made it the other night too. Hit the spot. may need to bring to a few bbq's this summer.
