My name is Nikki...and I eat corn! It's good to know I'm not alone. But for some reason corn on the cob makes me REALLY full really fast. Is there more fiber or sumpin?

 Hmmm good question!  I doubt it has more, but perhaps it because it's fresher and has more starch/fiber/carbs still?  Does fiber break down with age?  I guess it could. 

Perhaps it's the act of eating it off the cobb that slows us down enough to register full before we get too much in?  I can eat half an ear, but I'm pushing it with those last few bites. They sure are good though.

Lovely day here! Got up and did a power yoga class and then a quick 1.5 miles on the treadmill. Came home and have been doing chores. I bought a baby grand piano and it's being delivered tomorrow, so I'm a having to move things around and make a special place for her. Plus I'm doing stuff that needs to be done at the beginning of summer -- you know, storm windows down, AC covers off, backyard fountain fountain-ing, etc., etc., etc. But it is a beautiful day to do all this stuff, so I'm enjoying!

B: egg/turkey sausage/fruit
L: boca burger/sandwich thin/popcorn/avocado
S: Quest bar
D: GF tomato, mushroom, onion, pepperoni pizza and a nice spinach salad
S: protein shake

Okay, it's back to the backyard and more stuff to do!

We are lazy today after graduation ceremony on Friday and birthday celebration on Saturday.  It's been late nights.  Most of the family have gone home.  I slept in and just finished a protein drink while watching TV.  Guess I need to start thinking about dinner for those still here.  We cooked out yesterday.  Maybe we'll just go out to dinner.  Yes, I've talked myself into going out.  LOL

 Hope all of you are enjoying this day.  It's very hot in Missouri. 

I have a pot of Nik's Kick Arse Chili cooling.  She said it's better the next day but I couldn't resist trying it.  D-E-L-I-C-I-O-U-S!!!  I was hesitant to try it because I've never eaten TVP.  The TVP looks kinda like ground beef....I think.  Wasn't sure about the squash and eggplant but it's really great.  My son won't go near it because of the veggies but I'm sure hubby will try it.  I'm going to freeze iOan individual containers to take in my lunch.

The last week I've worked on changing my eating habits and getting in more protein, less carbs and the carbs I do eat are healthy.  I got in a bad habit os grazing.  I've also added walking almost every day.  I lost 4.2 lbs. this week.

1/2 cup Nik's Chili
Banana
Grilled chicken
Sugar free apricot Jello
Pickled beets (made with sweetener)
Greek yogurt
