What's for dinner - Thursday!!!!!!!!!

Tonight…FOR ONCE…I know what I am eating for dinner.
Let me just say that I have a dinner “mind block.Â" It’s not that I don’t believe in the meal. It’s just that dinner carries a certain…finality about it that my addiction does not like. So generally I am averse to eating dinner as a meal. My addiction much prefers it as a series of mini-meals throughout the evening.
Add to that the very legitimate reason that I work out in the evening (and heavy meals and running do NOT mix…at least not for me) and you get a recipe for confused dinner plans.
But tonight it will not be that way! The divas and I are going walking around the lake (much to their chagrin) so I am going to fix up dinner before we go and we’ll eat when we come back.
Dinner will be my “Ooo…AhhhÂ" spicy vegetarian chili. (mmmmmm) with corn bread for the girls (I am going to *try* to abstain…or maybe I’ll bust into a jog for a mile around the lake and earn a piece…who knows?)
Nah…when you see what else I had today you’ll know why I should probably just stick to the chili.
1. Scrambled eggs with cheese

2. ½ of something called a “garlic chicken and cheddarÂ" wrap. Ate the whole half a wrap, wrap and all (and was not stuffed in the least but I didn’t eat anymore because I wanted…)

3. 3 oz. frozen yogurt with the following toppings (strawberry slices, blueberries, almond slices, a few pecans and yes…a dollop of peanut butter sauce which I allow myself to eat but still will not buy for my home). I love my RNY though. This was one of those places that charges by the ounce. 45 cents an ounce in fact. My co-worker went with me. Hers was $3.48. Mine was $1.34. :)

S’anyway…what’s on your plate today?

spicy pork enchiladas made with leftover pork loin. I will be eating the filling only--no tortilla for me or I will regret it.

Walmart sells a nsa cornbread mix, just sayin'.  I've been known to make them into mini muffins and eat one of two.  Low calories, not TOO many carbs if you plan for them.

I think it's Shawnee Mills brand or something similar.  They have a fe versions, two are NSA.  One is not typical cornbread, the other is.  I got the wrong one one time - my kids were not happy.

 Goodness.  Is it sad that the "What's for dinner?" question puts me into a frustrated panic?

I never have any idea. I tend to forget about dinner. I'm not usually hungry at the end of the day, and there have been many a conversation between my husband and I about the fact that if it was up to me, everyone would just fend for themselves while I went and curled up on the couch with a magazine. He gets frustrated sometimes that, by the time I realize I should probably feed everyone, it's 8pm and bedtime, and I've totally forgotten to make anything. (of course, HE never breaks out a pan and makes dinner, so he has no room to talk)

Anyway, dinner's going to be weird tonight because I have to go to my son's school and get him registered for 1st grade at 6pm then drop off a bunch of stuff at a donation center, so the kids will probably just have PB&Js in the car, and I'll grab a Quest bar or something.

  My middle two kids, oldest two that live with us, are gone on a band trip till Sunday night. So Colleen and I are here with just the eight and ten year olds. So dinner is much easier. The older one is my fussy one. Toasted cheese and chicken noodle soup for them. Talapia for us maybe with broccoli.

Tonight my husband and I celebrate our 37th Wedding Anniversary.  We are dining at a new restaurant for us in Ft Worth since we are here for the week.  I plan to share my husband's steak.
