So it's Friday night...what are we having for dinner?

 I am sorta hungry. I skipped my snack cuz I left it in the car. But I had a BIG lunch. So...I dunno. What I do know is that I am cooking again dammit!!!

And after tomorrow I will have all the food in my house to make lunches for next week AND dinners. I am insanely excited.

Tonight will either be leftover spaghetti sauce (MINUS any noodles!) OR chili. Haven't quite decided yet. I do need to go have a word with the Giant grocery store. They have their own brand of 6 oz. Greek yogurt for 89 cents but never seem to stock the plain. I need to let them know I live here now and so I'll be needing you to keep that in supply. I usually buy a whole two weeks of it at a time when I go grocery shopping.

So anyway, here's what else I had today:

1. A sausage biscuit
2. Sushi and miso

It's a wonder my blood sugar did not crash. No more starchy carbs for Nik.

Um... hummus and whole wheat pita, I think.  My current favorite food.

I had a protein bar for breakfast and homemade Greek yogurt for lunch.  I think I am going to make some roasted chickpeas later tonight for a snack.

How do you make yhe roasted chick peas?  Are these the canned ones?

Yep.  Canned ones.  You drain them, then put a towel on a baking sheet, spread them out on the towel, and pat them dry.  Preheat the oven to 400 degrees, drizzle them with a little olive oil or spray with pam spray and stir, and then bake them for about 50 minutes (yeah, it takes a long time), stirring a couple times while they bake.  They should be nice and brown and crunchy when they are done.  Season however you like.  I use salt and some Creole seasoning, most of the time.  They are DELICIOUS!

Do you have a good recipe for roasted chickpeas? Are they crunchy when roasted?  I'll have to look up whether they have more protein than roasted edamame.

I was up early to work out with the trainer today... I told her if she doesn't want to work me out anymore, just tell me, no need to try to kill me off!!! (28 flights of stairs - jogging, hopping, every other step, sprinting... she called that the warm-up). After the workout I changed clothes and crawled out to my truck. Quick stop to buy a new phone charger and then on to counseling. That was actually fun - I got him to let ME ask HIM questions. Then clothes shopping for a pair of decent pants to wear to the funeral Monday. When I got to my parent's house my niece and her hubby were here so we visited for about 3 hours.


It's been an interesting day food wise for me as well.

8am - B - mint cookie protein / skim milk
After gym (around 10) 1/2 quest
12 noon - 1/2 quest
4pm - scrambled egg / shrimp / peppers/cheese / toast (with REAL wheat bread... the horrors.... gotta order more P28)

So was the egg and such lunch? or dinner? I am leaving in an hour to head over to a friend's house for "game night". There will be fruit, veggie and meat /cheese trays. DO I call that snack and eat real food when I get home?

Ack... having a social life could possibly be a drawback of WLS lol

I made Thai Stir Fry with beef.  I mixed a little brown rice in it.  Later I will have a Carbmaster yogurt and a small slice of leftover pizza.  That's my food for the day....I work nightshift and just woke up about an hour ago so my first night off makes for a very light eating day....

I had a Premier Protein bar for breakfast... Greek yogurt for lunch (papaya)... a hand full of almonds as a snack... and these "veggie chips" - which, in my opinion are just veggie colored pringles...LOL... tonight I am having hand breaded fried cod - which I treat myself to about one a month. The bar across the street has these thick pieces of fish that are so moist and fabulous. I remove 1/2 of the breading (so I get enough of the actual fish) and have it with a salad. Yum-O!

Tonight I'm making a ricotta/marinara/mozzarella bake.  I had this last night and it was so good.  Have I mentioned how nice it is to be off liquids?

The rest of the family will be eating peanut chicken lettuce wraps and mongolian beef.  I had a bunch leftover from the lunch I made my daughter's teachers.  My husband and kids are so excited. lol
