What's for dinner - Monday!

Well, I shook the melancholy. I had a burst of creativity working on a project that had stumped me for days. Creativity is interesting that way, especially in writing. One day you have nothing, the next it's like the floodgates have opened!

Dinner tonight...I wish I could tell you for sure! I cannot WAIT to be all the way moved! I like my cooking WAY better than anything a restaurant has to offer.

Here's what I had so far:

1. 1/2 c. cottage cheese with strawberries & Fiber One
2. (Surprisingly that lasted me until nearly 1 p.m. when I had...) 1.5 egg foo yung patties w/ gravy (way to add that fat back in, Nik!)
3. Hot Click with water

So although my calories are a bit high-ish because of the EFY, I think I can still pull out a reasonable day. If not, well...at least it was mostly protein!

Nik-

I meant to tell you...made your protein oatmeal yesterday. Super Yummy!!!

Also made a version of Jen's crab dip, but used leftover crawfish we had boiled. Literally I ate it for a week. It was perfect when I was in the in between real food and puree stage. Tasted FAB and went down easy!!

I had protein oatmeal for breakfast.

Fajita chicken strips for lunch. Really yummy but small, so I ate 4.

I had some more protein oatmeal for snack. (Have I told you how good the protein oatmeal is? LOL!)

I will be having 4 pan seared butterfly shrimp with a littl Tony's, a smidge of REAL butter (good fat) to keep them from sticking.

I did cheat and have a bottle of Diet Gold Peak tea today. Super yummy. But I did get in another 45 oz of water.

Yummmmmm

I do heart it myself. My problem is this. Have you ever started eating two foods together only to find that after a while you no longer like one without the other? That's how I am about oatmeal. I like it with peanut butter (not PB2 or peanut flour...peanut BUTTER). I am currently abstaining from peanut butter (my rule: you can't eat it like a sane person, you are not allowed to buy it!), hence no oatmeal. Sad. I need to fix that.

I just finished my Make Your Own Takeout dinner of beef & broccoli over some of your awesome cauliflower "rice". So yum. The "rice" even fooled my 2 yr old. When I put it in front of her she said "Yumm Mommy Rice!" so cute lol.

I haven't eaten much today; which is on par when I go low carb.

B: cheese stick
L: fish filet & tossed salad
D: MYOT Beef & Broccoli

I think I'm going to do a SF jello/pudding/cool whip for snack later. It's a really weird recipe I found online ... Not sure if I'm sold yet lol.

I have not felt like cooking in a while.  I've been tired and my back hurts.

For breakfast today I had half a whole wheat pita bread with hummus (I have been loving hummus lately).

For lunch I had a protein shake.

For dinner I had three wheat thin crackers with cheese, then I had a protein bar.

I don't know what I'll have for a snack later.  My partner did the grocery shopping today, and why is it that men cannot seem to buy the right stuff at the store?  I make extremely detailed grocery lists, explaining what brand to get if the brand matters and even saying where to look for items, like if it will be on the bottom shelf or so on.  He was supposed to get Klondike brand no sugar added ice cream sandwiches, which have three grams of sugar.  He could not find those so he got Skinny Cow ice cream sandwiches instead, which have 15 grams of sugar.  He figured that was  pretty much the same thing.  So I guess I will not be having an ice cream sandwich later.  I guess those can be his snacks.  I am annoyed.

 I love hummus. Love. L-O-V-E.

I need to start making my own. I know how and it's easy enough. I just...don't.
