What's for dinner - Friday!

Welp…Esmerelda (my inner food addict) has struck again.

Today’s target: Oat-date bars my supervisor brought in. She sliced them into little bite sized pieces which, to Esmerelda, meant eat three of them!

I am waiting for my blood sugar to tank folks. It’s gonna happen and I’m gonna let it cuz I need to learn the hard way.

Anyhoo…

Dinner. Well once I pick myself up from a cold sweat on the floor I am gonna go home and make me some shrimp ‘n eggs. Lovely!

Here’s what else I had today:

1.      Omelet with 1.5 eggs, cheese, turkey bacon, greek yogurt and salsa

2.      Chipotle steak burrito bowl, no rice

3.      Three oat date squares

Ugh! I am through with Esmerelda! ***** ya ain’t got to go home, but ya got to get the HELL outta here!!!

By the way…what’s on your plate?

I have a prophets conference all weekend, so there's a turkey roasting in the oven for the men folk. And me if its done before I have to leave for evening service. Otherwise I have the other half of a killer walnut chicken salad and fruit plate from the local tea room a friend and I went to for lunch. Breakfast I was bad. Slept late and didn't have one. I am on vacation this week.LOL

Well, hubby is out of town, and so is my mother, so I am ALONE all weekend.  It's me time!  I have no idea what I am going to eat, but I am NOT cooking dinner, that's for sure.  I will probably eat some deli meat and a cheese stick, LOL.  Then again, maybe I will take myself out for a steak.  I guess it's just up to me, now, isn't it?

On my little square plate this evening will be chicken salsa, brown rice, a veggie, and I think, a small spinach salad on the side. Yummy, and filling for me!

My hubby wants to go to Cracker Barrell so I will either have the child's grilled chicken strips with pintos or nothing at all and have a BIG protein shake when we come home.  I can enjoy a cup of coffee while he eats and people watch all I want.

1/5 can of refried beans with one cheese stick melted on top, and salsa. For the fourth night in a row. Tomorrow I'll finish the beans, and will start on tuna salad. I can hardly bear the excitement.

Dinner tonite is chili dogs! Yes I will eat a bun but I have been very very careful with my carbs lately. So I have enough of an allowance for one wheat bun. LOL, I've been doing so good with my carbs lately that I feel I have to justify eating a hot dog bun to myself...lol.
            


Met my first goal, met my second goal, met my surgeons goal. Now I have a new goal!

 Breakfast- veggie omelet
 Lunch- green salad with with grilled chicken

 Dinner- I'm trying my hand at something new tonight. I'm making "portobello pizza" it's in the oven right now. I bushed some portobello caps (those things are pricey) with garlic infused olive oil, baked the caps for about 30 minutes then I'm gonna put some mozarella and spaghetti sauce on them before I stick them in the broiler. I hope they taste as good as I envision.
