cooking with fat free cheese

I am trying to convert a recipe for Jalapeno poppers.  It calls for cream cheese and cheddar cheese.  Can I do a mix of ff and low fat cheese or would it cook better with only using low fat cheese.

I always go with the low fat, no tfat free. They add to much junk to fat free to make it taste like anything

Fat free cheese is NOT cheese, LOL! I say that only partly jokingly (because FF cheese tastes horrible and very little like cheese), but if you read the ingredient lists in FF items (and even some RF items) you will find that they often add all sorts of chemicals (and often sugar!) in an attempt to still make it taste even remotely decent. Also when they add sugar (e.g., to peanut butter) to reduce the fat, the calorie count is often almost the same.

Things definietly cook better with LF rather than FF. They also taste a lot better.

You can get 2% cheese that is way better than fat free plus it is not filled with as much junk. I have used fat free cream cheese that is decent. But I only use the Philadephia Cream Cheese. It is usually reduced fat or fat free. But I always play with recipes to lower the fat and caloric intake. Play around and see what you like.
