What's for dinner? Wednesday
Ordinarily tonight would be church dinner but this is not an ordinary time. I just didn't feel like it. I am going to shoot to resume my normal schedule next week (if I feel like it) but this week I am still sort of a hot mess and frankly I am a bit "condolenced" out.
So I decided instead to make dinner at home. Cheesy chicken and brocolli casserole (with riced cauliflower instead of rice). La Petite Diva balked. She hates brocolli! (the elder loves it but hates peas which the younger lives for). I gave her a choice: eat this or eat nothing. Miraculously she agreed to give it a try and...
Loved it! i consider that a win.
Here's what else I've had today:
1. Egg McMuffin
2. Shrimp 'n Eggs (It's more than what it sounds like. It has sort of a cajun spin with a tomato base and it is spicy with LOTS of caramelized onions. Maybe next week I'll make it again for the blog to share).
3. Quest brownie bar
4. A fun size Snicker bar and four malted chocolate Easter eggs
5. Cheesy Chicken and Brocolli casserole
All that for a bargain price of 1,050 calories. I still have a protein shake on my plan. Probably won't get to it. Tomorrow is back to work and I want to go to bed early.

B: 1/4 COTTAGE CHEESE N FEW PIECES OF CANTELOUPE
L: 2 OZ TILAPIA AND 2 CLUB CRACKERS
S: LIGHT STRING CHEESE
D: 2 OZ CHICKEN BREAST AND A COUPLE BITES OF MASHED POTATOES

You take a few chicken breasts and put them in the crock pot and cover with a packet of taco seasoning (sometimes I make my own seasoning from stuff I have). Then if I have it I put lime juice over the chicken, then a whole 16 oz jar of salsa....a bigger one depending on how much chicken you use. You cook it on low all day (8 hours). Then what my hubby and I do is shred it with a fork and mix it up with all of the salsa juices and serve it on tortillas or by itself etc etc.
We have been making a habit to using the La Tortilla Factory low carb tacos....and toasting them under the broiler then slathering on refried beans, the chicken, and whatever toppings we like (i.e. light sour cream, chopped onions, cilantro). It's so good! Of course I concentrate more on the beans and chicken! Enjoy!
