Breakfast this morning was a cup of skim milk with some SF chocolate syrup, and a few sips of a sugarfree, nonfat mocha. I needed some caffeine today, yow.

I finished my mocha after my workout. Got a 1.5 milk run in, followed by a few laps in the pool, and then I taught the preschool swim class.

Lunch is going to be leftover matzoh lasagna. It'll probably be dinner, too.

I'll have an Atkins granola bar for snack sometime today. And maybe a hardboiled egg.

My guess is instead of noodles it uses matzo (unleavened bread) since its Passover?

Mmm, it's delish.

During Passover, we can't eat anything leavened or made with traditional flour, except for Matzoh--unleavened crackers, made from flour and water and baked within 18 minutes. It symbolizes the Israelites having to leave Egypt so quickly, their bread ddin't have time to rise. (I should note that after the 2nd night, I don't really keep kosher that closely.)

So I made a lasagna, substituting the noodles for matzoh crackers. I used regular ingredients--ricotta, parmesan, mozarella, spinach, a couple eggs, tomato sauce, herbs...and then layered it all together between layers of matzoh crackers, which are large, about 6"x6" square. Bake til bubbly. It's so good. My mother said she didn't even know I'd used matzoh instead of noodles until my aunt told her.

I don't have a good pic of it cut. :( But it's really delicious.

My kids love matzoh crackers. We had a "Christian Seder" at my church two years back and they've been fans ever since. I don't use noodles in my lasagna. Wonder if these would work for me? I love my no-noodle lasagna (I use either eggplant or zucchini in place of noodles) but both veggies are on the kids iffy list.

If you give it a try, I use thin, unsalted Matzohs. I also run each cracker under ho****er before I layer  it, to allow it to soften as it bakes, into a more noodle-like texture.

For a large 9x13 casserole dish, each layer is three crackers--two whole, and one broken in half.  I usually use about 3-4 layers, and at 100 calories per cracker, that gives you about 1,000 calories of matzoh for the whole pan (not including cheese, of course).

That 9x13 pan fed 13 people at my Seder, and I'm still eating the leftovers. So when you break down the calories per serving, it's not terrible at all. And it's tasty!!
