I had to Google a couple of those items because I had never heard of them! I love edamame but usually only get it in my Mongolian Grill bowl... I don't know why it never occurred to me to buy it and cook it at home, LOL.
What are some of the most flavorful (but reasonably simple) ways you like to prepare tofu?

I don't enjoy cooking much since surgery, so I don't mess around with plain tofu very often, but buy baked tofu, which comes in flavors such as teriyaki, Thai, Szechuan. I usually eat it cold, sliced into a salad or with other vegetables.

The tofu crumbles are convenient, too.

The Whole Foods near my house often has ready to go meals with tofu. My favorite is cubes of tofu with a lime and basil dressing. Yummy.
Edamame has become a staple for me. I often it eat cold, but it's also great mixed with spinach to make a salad, roasted, made into hummus, or in a vegetable soup or stew.

Duh.. I forgot to share what I've been eating for both a sweet fix and a meal replacement. The basic muffin in a minute recipe but add a scoop of protein. I made chocolate by adding choc whey and ad hit choc mix. It was hoc plate cake with 32 grms of protein! Top with sf raspberry preserves.
Be happy.
Hi Lora,
I know you said no meat, but how about tuna? I buy the white chunk in water, drain it and add 2 TBS of salsa--it is really good, or you can add mustard.
The pouches are nice too, no draining necessary. I also get the edemame from the oriental food store and use them in salads. I also have the dried ones on hand from Kroger for a crunchy snack.
You have this! Keep on . . .
