I need low-carb, non-meat protein suggestions

my go-to protein source is eggs. I take one egg and scramble with 4-5 additional egg whites -- over some spinach and garlic - totally good lovin.

Cottage cheese and frozen blueberries and splenda whirled in the blender then frozen a bit makes a nice filling food, too.

Other than some version of scrambled/omelet and hard boiled, any suggestions for unique yummy ways to eat eggs?  (I do make some of the mini crustless quiches inspired by Eggface's recipes.)

How about deviled?

I have free access to fresh eggs from MIL. I make deviled eggs with dinner about three times per week. I added BBQ sauce to em yesterday and they were so good! I also saw a recipe from egg face on pizza deviled eggs?

 Mmm, eggs. 

- Poached, served over some shredded corned beef.
- Pickled, chopped, in a salad
- Crustless quche, loaded with lots of veggies and lowfat cheese (making it a regular sized quiche could get you more protein for your punch)
- Baked into a tomato (minus the polenta in this recipe)

- Egg salad
- Faux french toast (blend one egg with a packet of splenda, and a dash of cinnamon. Beat well and microwave in a ramekin for about a minute until firm. Serve with a Tbsp of SF maple syrup. Sounds gross, I know, but it has the exact same taste and creamy, fluffy texture of french toast.)

 hmm for that tomato one i'm thinking some kind of ricotta (or other cheese) mixture instead of the polenta. maybe even forgetting about the egg lol.

Crustless quiche. I use 4 egg, half a pack of frozen spinach, squeese ou****er. Grated cheese, any kind, about a cup. Add half cup of milk, salt and any seasonings you like. Mix everything together. Greese a pie dish, set oven to 350 and bake for 40 mins. Add anything you like to this basic recipy and enjoy

I'm 99% vegetarian, I occasionally have fish.  My favorites are:

tofettes (flavored, prepared tofu)
quorn products - love them all
boca sausage & burgers
tofurkey sausage
gimme lean - breakfast sausage style

Most of the above are filling & relatively low cal & fat.  Protein varies.

How about french lentil salad with feta cheese.  I know lentils have carbs but they are complex.

The Simply Bar is a really good protein bar with low carbs.  I've made the Edamame and lentil salad from eggface's website and really like it, but its not that low in carbs, although I didn't count fibre so the net carbs must be lower.

From the Book   -   Eating Well After Weight Loss Surgery by Patt Levine and Michele Bontempo-Saray.                                         Broccoli and Cheese Omelet

1 cup broccoli florets, chopped                       Mix broccoli, shallots, and water in a  small, 
1/4 cup shallots, minced                                   microwaveable bowl.  Cover.  Micro for app. 3 1/2
butter-flavored cooking spray                            mins. or until broccoli is soft.  Cook all ingredients
1 cup egg substitute                                             in a saucepan. 
4 ozs. low-fat Swiss, diced
salt and pepper to taste

Fat 4.07                     Carbs    4.64             Protein   15.36g

Omelet a la Quebec

1 1/2 cups fresh mushrooms, sliced thin         1 tblsp. water
4 ozs. (4 thin slices) cooked turkey breast, torn into small pieces
(Cook in micro. on high for 3 mins with the water. Mix turkey pieced in with the cooked mushrooms.)
1 cup egg substitute                                                       Cook all ingredients in a saucepan.
butter-flavored cooking spray
4 ozs. low-fat cheddar cheese, diced
salt and pepper to taste

fat 2.11                     carbs    3.19              Protein 23.26 g

OOPS!  Sorry, I thought you were wanting eggs.
