What are you eating/doing today? Sunday!
Today is cool and rainy here in Baltimore, a welcome reprieve from the recent heat wave. it feels like March today1 I'm sure I'd appreciate todays temps much better if I were coming from actual winter to this, but seeing as we never got a real winter...
Eats as I know them:
1. Apricot cheesecake Greek yogurt w/ Fiber One topping
2. Probably an egg-chilada
3. Dinner will be crockpot roast, some cheesy mashed cauliflower and seasoned collard greens. The kids will keep hacking at our last loaf of Irish soda bread (I froze it and then thawed this weekend)
4. An English Toffee crunch Weigh****chers ice cream bar

Just wanted to tell you that I made your Taco casserole ( I swapped out the black beans for quinoa because that is what I had in the house) and it was fabulous. I portioned it out for lunch for the week. Thanks for a great recipe!!!!
B: Ham and egg on Joseph's Flax, Whole wheat, oat bran pita
L: Taco Casserole
S: Stew
Snacks: PB2 on same pita, apple, all natural fruit snacks (chewy, low cal and an indulgent carb I know!)

Gotta Get in Gear....I'm having a slow, slow start to my day and way too much to do. Oy!

I'm going to the gym this afternoon and going to do some water jogging and lap swimming. Plus there's some loads of laundry that need to get done somewhere in my day too!
Nik - I don't know how to post an image to Bariatric Foodie, but I did want to share my picture of a first-time try (and mighty tasty I'd like to add) egg-chilada made with egg+white, ground beef, salsa, mexican cheese and a dollop of guac. Very tasty and filling!

Ribs (Soft, fakey kind) 1/4c
Pinto beans 1 oz.
Spinach 1 oz.
Dinner
chicken drumstick (no skin) 1/4c
applesauce 1 oz.
spinach 1 oz.
Snack
chicken drumstick (no skin) 1/4c
buffalo sauce
10 oz. protein drink thru out the day
l - maybe a shake or protein bar
d- some meatballs and cheese likely. maybe a taste of pasta.
s - don't know yet.
i have no appetite lately, it's been hard getting stuff in. i ended up under 1000 calories yesterday :-/ it's also effecting my energy. trying to get my butt to the gym today is proving to be super hard! i usually do a 10k on the elliptical on sundays, but i don't know it's gonna happen. maybe i'll make a coffee protein shake and drink it on my way there. okay i'm just ranting and procrastinating now....
