So about this "Egg-chilada" I've been talking about...(food porn within!)

This is an Egg-chilada:



Believe it or not that WHOLE thing is made with only one medium egg + an egg white. You can fill them with whatever you like, top them with yummy salsa and I put some Greek yogurt...and you get all the fun of an enchilada without the carbs!

Yummy Nik! I can't fathom eating that monster right now but I could see slicing it into 4 portions for multiple meals. Maybe I will .

Well that's the good thing about egg substitute. You can measure out how much YOU could eat and make it based on that. You could do a "mini-eggchilada" lol!

Hmm...so I am thinking about that chicken breast I have thawed and I see it sliced and sauteed with a bit of onion and green pepper...throw in some black beans maybe.  Wrap it up in this with the salsa and yogurt.  Nice. 

Thinking DH will accept this after a few initial pokes with his fork.

 the italian in me is thinking this would also be good with chicken and ricotta on the inside with some tomato sauce and shredded mozz on top.... it may actually be dinner since i have all these things
