An easy, tasty starter recipe for quinoa

I'm definitely putting this on the menu for next week!  (I'd make it tonight if I had the ingredients)  I think I'll top mine with some shrimp to up the protein (plus I just love shrimp - LOL).  Thanks, Nik!

 Oh another good idea. You know what might be nice is if you marinated your shrimp in cilantro and a bit of lime juice, grilled it then chilled it and served it atop that way. Especially if you make the spicy version, that will give a nice, cool offset!

Update:  I made this last night and it definately will get a permanet spot in the recipe rolodex for sure.  I did tweek the recipe a bit though.  I'm a spicy spicy spicy person...the BF is a little spicy person.  So I compromised by using 1/8 tsp of chiptole and 1/8 tsp of chilli powder to make a "medium" spicy version.  I also added a packet of Goya Sazon to it (I'm like the old lady in the Frank's Red hot commerical..."I put that ish in EVERYTHING").  I also sprinkled a little Adobo on my serving. 

I ate 1/2 cup with 2 oz of canned chicken breast and it was delish!  I served it to the BF and a friend that come over for dinner with Spanish Chorizo and salad and they RAVED about it (after I explained to them what quinoa was..lol).  Lunch today is  1/2 cup with the remaining 2oz of canned chicken breast and tonight for dinner I'm eatting it with some Spanish Chorizo.

I will say this, that quinoa expands a LOT and I probably should have halfed the recipe because I ended up lots of left overs so I've got a bunch in the freezer to eat as side dishes with grilled chicken or fish on lazy cook days.  I also sent a big tupperware container home with our friend that came over for dinner as well.

This recipe gets 2 thumbs up!  Great job Nik!

Yeah, I make recipes that yield at least a few left overs for my lunches and for the divas (or diva, in this case).

Your tweaks sound yummy. May have to try them!
