...And speaking of food. What's for dinner?
I will haz...chicken of some sort. I had planned to make healthier adobo chicken but...not sure. But there will be chicken.
The girls want to go to the shoe store for new shoes. I must admit they NEED them. They've been troopers about their shoes. I keep a pair of shoes forever and two days. They seem to need new shoes at least six times a damn year.
Anyway...here's what I've had today:
1. PB (1 tbsp on a spoon)
2. Egg on a piece of WW toast
3. Muscle Milk RTD chocolate
4. Taco casserole and a pudding cup
5. Greek yogurt and sf apricot preserves (YUM)

Oh heck, I don't know... I had a tortilla pizza for lunch and am absolutely not hungry at the moment. I might go light on myself today and just have a protein latte later and maybe a greek yogurt with some FIber One twigs in it... at least then I've topped out on my protein for the day and get some fiber, too! ;)

Making a noodle-free baked lasagna.
I'm going to mix some part-skim ricotta with an egg, thyme, basil, garlic, s&p, and a smidge of parmesan, and layer that with shredded baby spinach and marinara sauce. Then bake until bubbly.
And I'm going to have a little of that with the two swedish meatballs leftover from lunch. Oh yes I am. Dinner is soundin' GOOD.

No, it's just kind of a throw-together idea. The recipe is pretty much exactly what I wrote. You could adjust quanitities to taste. I tend to just toss in spices and taste as I go. I rarely measure.
I took a pint container of part skim ricotta, and dumped it in a bowl and mixed it with two large eggs, a sprinkle of italian herbs (thyme, basil, oregano, kosher salt, cracked pepper) as well as a hefty sprinkle of grated parmesan, a dash of onion powder and some crushed garlic. Mix it til smooth and well blended.
Spread a few spoonfuls of the ricotta mix into the bottom of a personal-sized ramekin (you could totally make this in a family sized casserole, but I like my portion control). Add a layer of shredded baby spinach. Top with a few spoofuls of marinara. Add another layer of cheese and repeat with the spinach and sauce. I like to add a third layer of cheese and sauce to finish.
(Three layers of cheese, three layers of sauce, two layers of spinach)
Put into a 350 degree oven and bake until bubbly. Mine took about 25 minutes. Let it rest and set for a few minutes and serve warm. You get decent protein from the ricotta and eggs, and the antioxidants, vitamins, and fiber from the spinach and tomato sauce, especially if you use a nice chunky marinara. And it's freakin' delicious.
One pint container of ricotta made three geerous-sized, personal "lasagnas". I estimate each one to be roughly 230 calories, 15g fat, and 16g protein. Each of the ramekins feeds me for two meals.
You could easily make it lower fat/cal by using eggwhites instead of whole eggs and substituting nonfat cottage cheese for the ricotta. Just make sure to drain the cottage cheese really well so it doesn't get soupy in the oven. I'd imagine you could also mix a bit of protein powder into the cheese mixture too, to boost the protein numbers.

Today have been a I want sweets day and I am hungry hungry hungry day, But I survive it so far.. I even had 2 protein shakes today and exercise for a hour and a half just to keep me from eating, it is a good thing that we have nothing sweet or junk in the house. having baked chicken breast- salad- 1/2 sweet potatoes, later on if I am still hungry I will eat some yogurt, I almost 2 years out and this is the first time that I have felt hungry even after I ate, I knew this day would come, so at least I did not freak out and eat jun****ep it healthy, but it was not easy, I felt that old me saying oh go ahead go to the store and get you something, so I spoke back and say old self this is new self and I will not listen to you, I am healthy now and not a slave to food-- I am the master of it lol-- I do talk to myself when the old self try to surface and I have to put it straight lol.. anyway thanks for letting me vent :)

Beef Veg soup and half piece of bread for dinner
Niece and her husband were over for dinner tonight so tried out an Irish Bread pudding I am going to make for a St Pat's party. It was phenominal! Made Irish Cream yesterday. It is supposed to rest for a week but used it anyway. Man, I only makw things like this when I am having company. They Loved it. Sent most home with them but saved a small piece for me for later and a piece for a homebound friend.
Have a couple left over pan fied oysters that I will probably have later to get my protein in.
Nik, are you almost done with that mexican casserole? Seems like you have been eating it all week.

L / D / S (enough calories for all of them at least!!!) -
- WW tortilla, cut in half; one half w/ ground beef taco, one half with shredded chicken; easy on the toppings; 2oz rotel w/ sausage (too spicy, didn't eat it all); about 5 small shrimp; and a brownie....... for a WHOPPING 722 calories!!!!
Yup. I'm done for the day - even though I have 6 1/2 hours left on my work shift. Ding Dangit
