What's for dinner - Tuesday!

 Ok, I never thought I’d say this but…

 

I’m kinda getting sick of taco casserole.

 

(the world may end!)

 

Next time I get it in my head to make a double batch, somebody smack me!

 

La Grande Diva (who, oddly loves each individual component of taco casserole but not the casserole itself) has requested baked chicken. Maybe I’ll eat that. But I was planning on making her thighs, which somehow never sit right with me (me + animal fat = death). Soooooo…not sure.

 

Anyhoo…here’s what else I’ve had today:

 

1.      Almond butter oatmeal

2.      Muscle Milk Light shake

3.      Chicken cacciatore and asparagus

4.      A few squares of dark chocolate

Breakfast  Chicken Adobo
Lunch  baked beans ;p
snack  humms on mini multigrain club crackers
dinner  ground turkey with cilantro, lemon grass in lime juice, smothered in mexican cheeses
snack  string cheese


the most I've ever eaten in an entire day since 12/27/11!  I feel like Im not starving to death now. :P

making chicken yakitori for next week   With the slow cooker, Im thinking i can scale waaaaay back on the honey and up the sake.  evil grin

Question. In my pre-op days I fried the adobo before adding the oil, vinegar etc.

Do you still fry it or do you prepare it some other way? I don't do well with fried foods.

hmmm.  Mine is a little different. I either boil down the sauce on medium or put in a slow cooker 4-6 hours. There's no frying at all. But yours most likely is more fancy than mine.

1 pkg chicken (deskinned, deboned as per preference)
1/2 c soy sauce
2 c water
1 onion (cut up)
1/2 c white vinegar
garlic to taste (minced)
ginger (pinch)

combine all and just let the sauce bubble off.

Still finishing my lunch. I made a single-serve packet of mashed potatoes (about 1/2 a cup) and poured a can of steak soup over that. Yum, and nice soft veggies for fiber, too.

But it takes me all afternoon to eat it.

The Kid's school is having a fundraiser at McDonald's tonight. Even pre-op, I hated McDonald's. Smells like body gas to me. I'd like to go, if for no other reason than to support his school and let the kids wear themselves out on the PlayPlace (ie: early bedtime! Woot!) but I'm not sure what I'll do for eats for myself. I might be able to pick the chicken off a salad and eat that with some lowfat dressing. :: Not sure yet. I might just bring a protein shake and forego food altogether until I get home.

Also, just an aside - I would normally veto against fundraisers that encourage kids to eat junky fast food, except my son's school doesn't do the door-to-door direct sales fundraisers, as they know it's a burden on parents and potentially unsafe for the kids. So these kinds of things are their main way of raising money. So I support that.

 Well, I think there's an important statement to be made there too. While McD's is far from the bastion of healthy eating, they have some decent choices if you look on their menu. When I take my kids, I get the southwest salad which is 290 calories, 28g carbs, 7g fiber (so 21 net carbs) 27g protein and doesn't need to be dressed. For someone at my stage, that's a good option.

My kids know better than to want to eat a bunch of junk at McD's and usually go for a grilled chicken something or other (I like that they offer whole grain buns for their grilled chicken sandwiches). Usually we get one large fry and share it (and yes, I eat some too). 

Not trying to sell you on McD's but fast food has come a long way in offering up some healthy choices. I think there will always be crap there. And frankly some of McD's food sourcing methods frighten me, but I gotta give them props for trying.

Oh and they also have a new, smaller kiddie sized fry and the pic has been making the round on the interwebz for how tiny it is. Check it out:

 I know, I've seen those! How cute. And the happy meals now come with apples AND fries, so there's no longer that battle.  I don't have a particular beef (pardon the pun) with McDonald's menu because it's like any other restaurant--there's junk and there's not-so-junk, you just have to choose wisely.  I just can't stand the SMELL of the place. I got my son a happy meal a few weeks ago because he'd earned 10 home-points (he earns points when he goes above and beyond his daily chores), and I let him choose his treat, and that's what he chose. My whole car reeked the rest of the day. For some reason, Burger King and Hardess don't have that smell. It's unique to McD's. 

I also live two blocks from a McD's--it's right across the park, so I smell it every night when I take my dog out for her walk. It just turns me off. and to me, the burgers taste the way they smell.

But like I said, I'm happy to go and help support the school. and my kids are great about accepting healthier options. My son is the best support I could hope for. He's still young enough I can order for him, and he never gets upset at what I choose. :)

I think I did really well.

I ordered a grilled chicken snackwrap with no sauce. Trashed the tortilla, ate the chicken and a few pinches of the cheese/lettuce. Nice and full, and my pouch is happy. And it only cost a buck!
