What was/is for dinner? Thursday!

Just finished mine (I know...late!)

I made the quickest, laziest version of chicken rollatini ever. I will show others how on Bariatric Foodie next week.

Other than that, I had a hella carby day!

1. PB oatmeal
2. Salad w/ goat cheese and raspberry vinaigrette and half a five-grain personal pizza from Uno's (it was eggplant, spinach and feta...NOM!)
3. Click Frapp
4. 1/2 a roasted cinnamon plaintain and way too many damn honey mustard pretzels
5. To Mini-Caramel cream cakes
6. And now the chicken rollatini

Yep...stick a fork in me cuz I am DONE!

For dinner I had:

Salmon Patties
Recipe: 2.8oz of canned salmon drained
               3 tablespoons of eggbeaters
               1oz goat cheese
               1 tablespoon breadcrumbs
               chooped raw spinach
               1 tsp of ranch mix dry

Dipping sauce:
             2 Tablespoons fat free sour cram mix with green onion dry dip from hidden valley

Tomato Chips:
             3 thin sliices of tomatoes, spray with canola spray, sprinkle with grated parm, itialian    seasoning and garlic powder, then topped with rf mozz cheese nad baked

 I made your Cheesy Mashed Cauliflower Cups tonight, they were very good! My sixteen year old granddaughter enjoyed them too. I bought the ingredients to make your noodleless tuna casserole out of the left overs for tomorrows meatless Friday, but realized I can't use them because of the turkey bacon! I will have to make that for Saturday instead. I had some chicken with the cauliflower cups for added protein. I also bought what I need to try the cream cakes!

Just a thought....you could omit the bacon....

It'd probably be just as good!

Or make it Saturday. Either way. I am glad you enjoyed the cauliflower cups!

Today I had:

B - Protein shake with Calorie Countdown and Isopure Zero carb creamy vanilla powder
L - Tablespoon of egg salad and tablespoon of chicken salad
S- 1 oz of Jarlesberg light cheese
D - Ground turkey with some Manwich sauce

That's all folks.  I am trying to get a few more calories in but I just have a tough time right now.  I know that will change in time, so not worrying it about it right now!!

My aunt came over this evening, and she brought dinner. I'd asked her what she was bringing, and she said Hamburger Casserole (which I assumed was like hamburger helper, which I would totally not be able to eat).

But it turns out, it's actually just ground beef mixed with a can of campbell's lowfat cheddar soup, topped with french fries. o.O

So I ended up telling her about my surgery. She was very supportive. I roasted up some brussels sprouts, carrots, and sweet potatoes to go with it, and had that and a few spoonfuls of the hamburger/cheese soup mixture (no fries, obviously). It was pretty tasty, and went down just fine. And I got some fiber in, yay!

I haven't had dinner yet. I still have 4 hours left at work so I am sure I will partake sooner or later.

B - protein shake w/ 1/2 banana, 1Tbs PB2 before workout w/ PT
L - baked porkchop, green beans, about 1Tbs of mashed potatoes
S - turkey pepperoni w/ laughing cow light cheese (2 wedges)
- greek yogurt with SF preserves, sliced strawberry and Fiber One

D - if / when I have it - I brought leftover nik's mexican lasagna and some steamed cabbage
