What's for dinner? Tuesday!

Ugggggggh! I so do not feel like dealing with the divas Girl Scouts meeting tonight. SIGH. I wanna go to the gym instead!!!

Ok, whine over. And I didn't even get any cheese with it.

So...dinner tonight. Probably going to be some form of tilapia as it is quick and simple. The divas are having something uber-yummy that I cannot have (both because it is not good for me, will put me in a carb coma AND because of such I did not get enough for me to have some). It's this brand of ravioli I picked up that is meant to be eaten like mac 'n cheese. In an attempt to make it more nutritionally sound I'm adding some veggies and using lowfat cheese soup but still...drooooooooool.

Anyhoo...here's what else I had today:

1. PB Oatmeal
2. Cup of chili and a small side salad w/ parm peppercorn dressing

Boy...I am a light eater during the day these days. It's ok. I more than make up for it at night, I assure you.

I was bad today--I only had coffee for breakfast.

For lunch I had 2 babyback pork ribs (about 3 oz) and a half cup of cauliflower casserole (boiled cauliflower, cream cheese, sour cream, and grated cheddar cheese) left over from supper last night. I think it was better today than last night.

For supper---I made a crockpot full of 15 bean soup, cooked until the beans are so soft, with a pound of lean ground beef, a can of tomatoes, a whole chopped onion, 2 tablespoons of minced garlic, 3 tablespoons of chili powder, 1 tablespoon of cumin. It's like chili, but it's not chili. Soooo good in a bowl with a little sprinkle of grated pepperjack cheese and pickled jalapenos!

i kinda tried to make some pizza loaves...mini meatloaves but like pizza..it was a trail effort.. ahha

anyhow made meatloaf but put in some pepperoni and parm cheese, i had ground turkey, beef and chicken mixed it all up, added the ususaly of green peppers, onion, celery and then pepperoni and parm cheese...put some of the meat down, then half string cheese and then more meat on top of that and made mini loaves..hubbies had mushrooms in his...and pizza sauce on top and more mozz cheese...they turned out pretty good...

 I went to the hippie grocery store and got some of their perfect protein salad. It's yummy.
I also bought some dried apple chips. Is it wrong that I'm too lazy to peel an apple?

Today was a semi good day for me! I had......

B- 2oz chicken salad
S- Roasted edamame 1/4 cup
L- Seafood Salad
D- Roasted butternut squash with unflavored protein powder.

I know it's not nearly enough but it's hard trying to fit more in right now because I am taking Carafate 3 times a day for an ulcer!
