So...what's for dinner?

I made the yummiest beef that just BEGS to be a French dip sandwich (for the divas).

It was SO easy I don't even count it as a recipe. Get the cheapest toughest kind of beef roast you can find (for the cheap factor, not the taste). Sprinkle both sides with salt and pepper, and put a little oil in a pan and sear both sides. Throw THAT in your crock pot with an envelope of onion soup mix and 2 cups of water and let it go. I actually went out for about 7 hours so when I came back...what was waiting for me was...simply heaven. Tender...juicy...even the 'wannabe vegetarian" loved it (and asked for a taste...dunno what that means...).

So the girls will have that on crusty french bread with au jus and a salad. I'll have me some beef and cheese and I'll probably dip mine in the au jus (although I have been known to just drink the stuff...I'm just sayin) and...not sure. Maybe some Greek yogurt for dessert. I dunno! Something!

Here's what else I had today:

1. A slice of WW bread with 1 tbsp PB
2. Click Frapp

Um...that's it. I skipped lunch. Now it's too late...

It's ok though. I'll treat myself to a shake later on to make up the protein difference.

ETA: Ok, I just hadda share how the sammies came out. I am a food blogger. I take pics of food! I had beef, cheese, jus and some Greek yogurt but lookit what the divas got:

wow that sounds good, I made some turkey breast in the crock pot for Sunday dinner, I put it on at nite and it was so tender, love crock pot cooking; lets see
B - protein shake
L- assorted spring mix lettuce with tuna on top
S - yogurt
D = Grilled fish with some steamed veggies and 1/2 baked sweet potato

Protein coffee
Chicken fillet, plain

protein bar
1 oz. nuts

pepperoni chips, cheese chips, and a little lettuce

Lots of propel water

Probably greek yogurt, maybe a protein shake if I'm still to low in grams.

I roasted a whole chicken yesterday, I am making Arroz con pollo with the leftover chicken and some puerto rican beans :)

Chobani w/ SF Apricot Preserves (thanks for the idea, Nik!)

Making chicken piccata, squash casserole, and roasted garlic & olive oil quinoa.

Hoping to head to the gym as soon as hubby gets home..missed my run this morning because I was up with a sick babe all night and didn't get to bed til almost 4am.

Mmmm, that sounds amazing. I love a good roast beef.

I went and bought a round roast yesterday because they had it marked down to 25% (about to expire, I assume) so I figured I'd take it home and freeze it and roast it up for my first foray into solid foods in about a month.

Except I overlooked the bag it was in and accidentally left it in my car overnight. And it was nice and warm yesterday. When I realized it was missing, I ran out and got it, but it had already turned all brown-gray. So my $12 roast is now rotting in my trashcan.

Dinner tonight will be leftover broccoli soup and tuna from McAlister's. Mmm!

For dinner I have an Albacore steak "mesquite grilled" flavor, and steamed veggies.

B- turkey pepperoni and laughing cow cheese
L - Nik's Mexican Lasagna and steamed cabbage

S - cottage cheese, strawberry, Fiber One "twigs"
maybe some turkey pepperoni / laughing cow or almonds and cheese

I was supposed to go back to karate again tonight, but it was SLAMMED at work and I just couldn't justify adding an extra half hour to my lunch (boss knows, and that is why they agree to it, they trust my judgement)
