What's for dinner? Tuesday!

SIGH! After the most stressful weekend EVER (see my OH blog for more details) today I worked HARD. Oy! But hard work is gratifying. And I'm about to go to the gym and work hard. Until I get good running shoes I'll stick to the elliptical, bike and row machine. I actually miss the jogging. It made me feel triumphant. I don't know that the shoes were the problem. All I know is that I don't EVER want to throw my back out again!

Anyhoo, just had dinner (and at a normal time and everything - yay me!): 3 scrambled egg whites with onions, peppers, sauteed deli roast beef, a Laughing Cow Light wedge, salsa and Greek yogurt. NOM! Protein on top of protein on top of protein on top of a bit of fiber. Can't beat it!

Here's what else I had today:

1. PB Greek yogurt w/ Fiber One
2. Split pea & ham soup and lunchmeat roll-ups

Might do a protein drink later on this evening. Pretty reasonable day, it was!

I'm officially on purees today, so I think I'm gonna treat myself to some tuna salad. Um, pureed.

A little story? When I was pregnant with my first child, I CRAVED Subway tuna sandwiches for three straight months. It was all I ate for my entire second trimester. I got to be very good friends with my local subway manager, and I asked how they make their tuna. she said they wring the tuna very dry, run it through the food processor, and then add a teeny amount of mayo. I NEVER would have been able to stomach the idea of pureed tuna if I didn't know that that's exactly how Subway makes it.) :D

 Just a random update. The tuna salad was ridiculous. Tuna, mayo, and pickle relish, all blended up. I also made a lima bean puree with some cream of chicken soup and a sprinkle of butter buds. So good. 

I used a tiny little tapas bowl and didn't even finish that. I took a picture of my teensy little bowl next to my son's full dinner--whole sandwich and beans--and it made me laugh.

Dinner is going to be the meat and cheese from a chicken burritto from Taco Bell (the puppies got the wrapper) and also 1/2 a container of pintos and cheese from TB.  YUMMMMMM!

 I'm jealous of the rowing machine at your gym...we go to a smaller gym and they don't have one..it was one of my favorite machines during past failed attempts at losing weight.

B: protein hot chocolate
L: chicken w/ bell peppers and onion and 1 tbsp refried beans
Im going to have some sort of snack before heading to the gym
Dinner will be chicken w/ cream of mushroom soup and green beans

Spent almost an hour with the personal trainer - 20 minutes of spin (wow,,kicked my behonkas!) then 1 round of strength training. I had to cut out before the other 2 rounds of strength training because I had my first appt with my primary doc since before surgery. He was pleased with my progress, etc but felt obligated to give me the "you can regain - don't!!!" speech

B - before working out - protein w/ PB2 and 1/2 banana
L - first try at whole wheat thin spaghetti w/ meatballs - no joy. I felt like someone hooked a hoover vac to my spine.

D - leftover Nik's crab and asiago egg casserole (WOW that stuff is FILLING) w/ veggies

S - turkey pepperoni w/ laughing cow light cheese; either greek yogurt cheesecake or greek yogurt onion dip w/ veggies

I just *love* this blog....and the best part is, my daughter, who never eats chicken, has inhaled many of the chicken recipes on here, AND, she has been helping me cook, which is awesome!  

This one is really, really good!  I used whole grain penne though, and just put a couple of drips of butter on mine.

 Tonight I got my hair cut...and I am feeling cute since I have been losing weight and the hair cut is looking better with my face!

B: Weight Control Oatmeal
S: Almonds
L: Leftover homemade Swedish meatballs and a string cheese
S: String cheese
D: Salsa Chicken with re fried beans and cheese as a quesadilla with salsa, light sour cream, diced red onion and cilantro as toppings.  I made it with low carb tortillas and just folded it over...I had about a quarter of the whole thing I made..Hubby ate the rest!  

It was so yummy!

I'm fighting the carb monster after consuming way too much of my son's birthday cake over the weekend.  When "they" say carbs are addictive, they aren't kidding!

So today I've eaten:
B: greek yogurt
S: protein shake
L: sesame chicken (Lean Cuisine)
S: Quest bar & grapes
D: 3.5 oz pork chop and broccoli & brussels sprouts

Then I worked out on the treadmill for 30 min.  Then the carb monster got me and I had half an English Muffin w/ PB & Nutella and a handful of Jalapeno Cheetos! 

Tomorrow I am going extremely low carb in an effort to rid myself of this monkey on my back!  LOL
