interesting observation about raw whole milk
I think it tastes better than milk you buy in the store, but that may all be in my head. Or maybe it's better because it's fresh - I pick it up a couple hours after it came out of the cow, and milk you buy in the store may be a couple weeks old. Or maybe it tastes better because I store it in glass bottles instead of plastic jugs - I think that can change the taste of things. Now, I used to buy skim milk at the store, and this is whole milk, so of course that makes it taste different too - but sometimes I pour off the cream to make butter or something and I still think the milk that is left tastes different.

I have an acquaintance who is a passionate advocate for full fat milk, meat, cheese. She lives on a small, self sustaining farm. I don't know if it the hard work involved, the natural foods or both... but she is fit and trim and healthy. She lives off of home grown pork, home grown chicken / eggs, veggies... she cooks with lard! *gasp* lol
And she has dairy goats for her own milk and cheese.

I do have to agree that my lactose intolerance (pre surgery) was always better with higher fat milk. It has less lactase in it. The 'skimmer' the milk the more milk sugar it contains and that is what my body had trouble with.
I do agree that fuller fat and not overly processed has a great to do with it. I think we have made our food so 'safe' its now unhealthy for us LOL

Margarine is one of the worst things you can eat. It was developed to feed & fatten up turkeys--only they wouldn't eat it!
I ONLY use real butter. Use a lot less of it and it is natural, not chemically engineered.
As far as non-processed cow's milk--it has been a long time, but I remember it as very fresh tasting, very creamy. I have never tasted anything else quite like it.

I am planning to start making my own butter from my raw milk, I just haven't gotten into the habit of it yet.
