What are you eating/doing today? SUNDAY!!!!

Today I am GOING to get some stuff done in this damn house. I have a mountain of laundry to sort, fold and pack! I've started transferring our clothes to plastic bins for the move. All our dressers need replacing so we'll likely use the bins until I can afford new dressers for all of us (Hello...Ikea?).

Other than that I'm sort of bummed about that story I was writing last week. It didn't come out well. And I know it. So now I have to make a case to my supervisor about why it is in our organization's best interest NOT to submit it. I don't think this was 100% my fault, but I still don't like putting forward something I don't completely believe in. But on the other hand, I didn't want to not turn in an assignment so...sigh...trying not to let this ruin my three day weekend.

Eats as I know them:

1. We had a pancake breakfast fundraiser at church. I had a glass of milk, 2 pieces of sausage and then two small pancakes w/ sf syrup. Since it was all you can eat (read: a food addict's death sentence) I am quite proud of myself.

2. I will probably have a protein shake next since breakfast was carby. ETA: 1/2 c. Greek yogurt w/ Splenda and SF Apricot Jam (yummy!) and 1/4 c. Fiber One + a lunchmeat/string cheese roll-up.

3. I'm making my killer spaghetti sauce tonight. I eat it in a bowl like chili. The divas will have it over whole wheat thin spaghetti.

4. I am thinking of making a SF cheesecake for dessert. So if so a slice of that.

I am planning to be pretty lazy today.  I feel worn out.

I had a protein bar for breakfast and will probably have yogurt for lunch.  I have this Mexican hamburger helper stuff I think I will make for dinner, because I feel lazy.  I don't usually eat stuff like that.  I'll make it with Morningstar Farms soy crumbles and pick out some of the rice.

I am in a weird down kind of mood.. can't wrap my mind around it. Went to church and will be headed to work in an hour or so - that will be the real challenge to my planned snacks vs grazing.

B - 1/2c cottage cheese, 1Tbs Pnut Butter, 2 strawberries (only ate maybe half)
L - 1/2 ww flatout w/ 1/4c herb and garlic tuna, tomato slice, 1/2 slice cojack cheese

D - left over Nik's chicken pot pie; some sort of veggies
S - turkey pepperoni w/ cheese and cucumbers; greek yogurt w/ SF preserves

I've been eating the same thing all day.

Made a big bowl of soup--tomato soup, diluted with one can of water (should have used milk), mixed with two scoops of protein powder--one chicken, one unflavored.

Been eating off it all day.

Had 8oz throughout the morning. Just poured my second 8oz, and plan to nurse that through the afternoon. I want something different for dinner, so I'll probably make some cream of wheat with Chike's vanilla powder.

 I miss tomato soup.  It's a comfort food for me.  Is yours just regular old Campbell's or is there a sugar free version out there somewhere?

I can't eat the Campbells because of the sugar.

Ooh - does anyone have a recipe?  I could probably make a really yummy version!

 Mine is just regular Campbells. 

But tomato soup is really, really easy to make. Blanch and skin fresh tomatoes, removing the seeds. Put them in a stock pot and cover with enough chicken or vegetable broth to cover. Add your spices--bay leaf, basil, thyme, chopped garlic, diced onion, salt and pepper. Let them simmer until thoroughly tender. I would normally advise a pinch or two of sugar for sweetness, but if you can't tolerate sugar, then that wouldn't be wise. You could always use stevia or splenda, but go slow and taste as you add. 

The easiest way to get it smooth is to use an immersion blender, but you can also do it in batches in your blender. Add cream if you like it thicker. 

You can also add in pureed spinach, kale, carrots, etc to give it a thicker, more robust flavor and more fiber and vitamins.

 Today, I'm going to get things accomplished. Yesterday, I got a new job/ promotion. I had a part time job at a catering company on my college campus, and now, I am promoted to working as a line cook! I am very excited, since I want to be a Chef one day, this is the first step for my career. So, I'm going to spend the day working and planning my future (pretty much my favorite activity). 

Today, I'll eat:

Coffee
B- Mini ww bagel with ff cream cheese
L- 6 inch ham subway sandwich
S- Nectar protein
D- Salad with chicken

Still in recovery mode here. And now I have a cold on top of that. I have coughed until my sides hurt.

Coffee w/ FF 1/2&1/2 and Splenda
Snack - Scoop of Matrix Vanilla w/ 8 oz milk
Lunch - 1/4 cup low fat ricotta cheese, 1 T spaghetti sauce, 1 t parmesan cheese

Don't know about the rest of the day. Lunch was my first mushie food.
