Tater tot casserole (and other illicit subjects)
Raised Southern Baptist here and our potlucks always involved large amounts of chicken spaghetti and at least one Texas sheet cake. I remember my grandmother cooking the pasta in the broth made from boiling the chicken. Cooked up some onions in butter, added the cream soups and cheese. Stirred all that with the chicken and pasta. Some finish with a bake, some don't.
Wow...haven't thought of that in years.
Great, next thing you know I'll be going to a tent revival.

Nik,
Have you ever read Jill Conner Brown's cookbook?
It is southern country Baptist cooking for large groups.
It is called:
Sweet Potato Queen's Big Ass Cookbook and Financial Planner.
See the section on cheese. You will be a Church Kitchen Star.
Of course, I think you are already a Kitchen Star but I do know church ladies and traditions and you have far too many vegetables in your recipes............... Just sayin'
Vicky .............. southern roots and a Baptist past

So i am lutheran too but i think around the Dakota's and Minnesota much of this is a scandinavian thing me being Norwegian and German. LOL!!
Tator tot hotdish is awesome and i brown my hamburger with onion, salt and pepper ( i use the california medley garlic salt with parsley instead of salt most of the time now). Put the browned hamburger in a pan, a can of green beans is the next layer and then a layer of tator tots..then i mix up a can of cr. of chicken soup with a can of milk and pour it over. Can double the soup and milk if need be. Yep thats it..heat it through until its bubbly..
another one..slice up potatoes, onions and carrots and put them all in a pan then i make like little hamburger balls and throw in there, mix 2 cans of tomato soup and 1 cans of cr. of chix soup and a can of water..mix it all up..salt and pepper and cook it until its done..love this one.
And the good old standby...boil elbow macaroni..fry up hamburger and onions mix with the drained macaroni..mix in tomato soup and diced tomatoes and probably some water..warm it up and if you want you can add a can of corn..nummy
This is the kind of crap i grew up with that got me to the state i am in now..lol

Catholic here. Seems like we had a lot of spagetti dinners and the go to casserole was tuna.
The reuban casserole thing was a dega vue moment. Just tonight I read a magazine with a reuban strata. I make lots of strata (with half the bread) and I never even thought about a reuban one. We will have a big St Pat's party next month and I am already planning on taking home leftovers so I can make it.
I can't remember the last time I had a texas sheet cake but I remember when you could count on two or three at a pot luck.
By now your church dinner is over so I hope everyone went home full and happy.
