Tater tot casserole (and other illicit subjects)

I'm Lutheran too! And my Pastor makes his own Kahlua! We do love to eat! The tater tot casserole sounds good, not something I would choose! We typically do some sort of pasta, salad, and bread for our dinners at church. It seems universal and everybody eats!

Yeah maybe I'll go with my original idea. Everyone else has just been so creative. One lady did a Reuben sandwich casserole!

And it hurts my ego to be outdone in the kitchen!

Wow a bunch of Lutherans!  I am too, born and raised.  And every occasion at church is an reason for some kind of pot luck.  My favorite is Hamburger cassarole.  Easy and cheap.  1lb hamburger (I use ground turkey now)cooked through,  I bag egg noodles cooked then mix with the noodles, the meat, a can of cream of mushroom soup, one can of peas, one can of creamed corn.  Put in a cassarole dish and put cheddar cheese on top and bake for 30 minutes till bubbling.  Sounds odd, but it is comfort food 101.  Have a great time.

It's easy enough.  My mom always made it, I always made it and my family loved it.

I browned the meat and onion, drained it.  Added cream of mushroom soup x 2 (my mom always added one COM soup and one cream of onion soup but I can never find it).  Heat until liquid consistency.  Sometimes I added a little milk to thin if needed.

Then in a big old pyrex dish I loaded in frozen tater tots, poured over the meat/soup mixture, gave it all a stir and baked until golden an bubbly.  Then I topped with a heaping handful of cheese an broiled it until it was just right.

I've made it since surgery and made some modifications, less cheese, fat free soup - but I find I just don't care to eat it anymore.  I make it with cauliflower sometimes replacing some of the tots, or I'll make it for my family and just eat something else.

They like it with ketchup all over it.

Very super easy.  I'll even cook it in the microwave to avoid using the oven and it comes out just the same.  10-20 minutes in the micro (stirring every 5-10 or so) and a quick broil (if you want to brown up the cheese topping) and you're good to go.

Ha ha I was raised Lutheran too! What about a big ole pot of chili and some corn bread? Otherwise, I 2nd a casserole of some sort (since you're short on time and have a limited budget).

Ohhhh...now chili could work as well. I'd have to cook it at the church, though. I forgot I was even supposed to do this before yesterday so I don't have the afternoon off and dinner is at 5:45 sharp!

I make Sour Cream Chicken Enchiladas:

  • 1/2 teaspoon garlic powder
  • 1 (4 ounce) can diced green chiles
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1/2 cup sour cream
  • 1 1/2 cups cubed cooked chicken breast meat
  • 1 cup shredded Cheddar cheese, divided
  • 6 (12 inch) flour tortillas
  • 1/4 cup milk
 

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
  2. In a medium saucepan add the garlic powder, green chiles, cream of chicken soup and sour cream. Mix well. Reserve 3/4 of this sauce and set aside. To the remaining 1/4 of the sauce in the saucepan, add the chicken and 1/2 cup of shredded Cheddar cheese. Stir together.
  3. Fill each flour tortilla with the chicken mixture and roll up. Place seam side down in the prepared baking dish.
  4. In a small bowl combine the reserved 3/4 of the sauce with the milk. Spoon this mixture over the rolled tortillas and top with the remaining 1/2 cup of shredded Cheddar cheese. Bake in the preheated oven for 30 to 35 minutes, or until cheese is bubbly.

I have to feed 40 people on $50 so tortillas are kinda expensive in that scenario. But that sounds yummy!

 Presbyterians didn't have nearly as much food fun.
I have had tator tot casserole before and I thought it was vile. This is from a woman who pre surgery felt like a bag of tator tots was a fine meal.
I love the combination of meat,noodles, and sour cream. My mom made hamburger strognoff  about once a week growing up. She made hers with white rice.
I also liked hamburger Spanish rice with tons of cheese melted on top.
I'm hungry..can I come to church with you?
