What's for dinner? V-Day!

Ok, so today was a good day. Made some headway on "the big article" and even managed to slosh through some grudge work. That's always good. Pam was off today so I had to stick it out by mself (she and I IM all day long). If you don't know who Pam is, check out today's Bariatric Foodie:

Ok, so...dinner! I am taking the girls to Golden Corral for dinner. Surprisingly they have a great selection of healthy foods. I will pick a few. They even have several healthy desserts. I will TRY to have dessert (I am more of a meat person, so I usually eat so much protein I don't have room for but a bite of dessert)

Here's what else I had today:

1. Eggs, scrapple and a piece of wheat toast
2. Three little heart shaped butter cookies
3. A salad with salad greens, turkey, pepperoni, bacon, tomatoes, onions and lite parm caesar dressing
4. Hot Click Vanilla Latte with 8 oz. milk and the res****er

What's on YOUR plate this V-day?

Spent an hour being beat down by the personal trainer... went and bought some new clothes (sizes 16/18 sweats, 20 pants, 22 shirts because of my ham hock arms!) and got a haircut. Helped my bedridden mom then took a nap!!

B- pre-gym - chocolate protein w/ PB2, Tbs greek yogurt
L - 2c of homemade chili.... boo
D - leftover pork roast from yesterday, veggies
S - strawberries and goat cheese, maybe some turkey pepperoni/laughing cow cheese.

Tonight is my support group so I hope the format is conducive to me getting knocked in the head about grazing and over eating.

It's Valentine's so the dinner I'm making my hubby and kid:

Red/yellow/orange peppers sauteed in olive oil, garlic, and wochester sauce
Little red potatoes boiled with garlic and thyme
Strawberries dipped in chocolate ganache
home made truffles (these I'm not touching)

Happy Valentine's Day!

Tonight I had Boston Market with hubby since he has a study group to attend for his PHR exam. I ordered a quarter white meat meal with mashed potatoes and green beans. The chicken was so filling that I hardly touched the sides. This was my first time at Boston Market...I think we'll go back! Hubby is doing weigh****cher points and they have a lot of healthy options!

Update: Just thought I would clarify...I have a TON of chicken left too!  :)

Ironically it's very similar to what you posted on your blog today. We had thrown chicken breasts and salsa in the crockpot this morning and when I read your recipe I stopped and picked up some ff cream cheese on the way home. I ate it as is, the family ate it in tortillas. It was tasty.

Then I had a sf sponge cake cup with sliced strawberries, sf cool whip and a dusting of cocoa powder. Yum.
