5 eggs beaten until lemon colored
2 cups of cottage cheese
3 Tbsps flour
7 oz can of chopped green chillies
1 cup of shredded cheese (I used a RF 4 cheese Mexican blend)
1/4 cup of shredded cheese

Salt
Pepper
Cumin
Garlic
Cayenne
(all to taste)

Heat oven to 350. Spray a 8x8 pan with Pam. Beat eggs until lemon colored. I use a ninja processor -- beat the eggs, then add add the other ingredients (stop at the 1/4 cup of cheese). Pour into the greased pan, top with remaining cheese. Bake 30-40 minutes until firm on top and knife inserted in center comes out clean.

I make this and cut into 9 servings. It's an easy grab and go to work breakfast; I usually have a couple of turkey sausage links (Jones already cooked all natural) with it for 20 grams of protein and about 170 calorie filling, savory breakfast. This morning I had 1/4 of fresh avocado with it....yummy!

Yes, I've seen you mention chile rellenos puff before and was intrigued.  I'd also love the recipe.

Mini-me is with her grandma for the weekend. We slept in and took it easy.

Breakfast was a cup of coffee and a peanut butter protein bite I made
Lunch is a blueberry protein shake
Dinner is venison heart with mashed cauliflower I'm thinking.

Pretty boring day in the south. It's cold and windy!

I slept without waking for more than 3hrs last night.. the first time in over a week! WOOT!!
Of course, I slept a little late and ended up with craziness at my house! Tree cutter, dog trainer and 2 different visiting friends ALL showed up at 11am and I had to be at work at 1 !!!

B - scrambled egg w/ shredded cheese, 1 turkey sausage link
S / L? - large strawberry w/ goat cheese; turkey pepperoni and 2 laughing cow light cheese wedges

D - leftover steak / shrimp / veggies from my hibachi last night
S - probably greek yogurt and SF strawberry preserves

Here's my plan for today:

Breakfast: protein peppermint mocha
Snack: bacon
Lunch: egg salad sandwich
Snacks: half a Quest bar, half a fruit & nut bar, greek yogurt & strawberries
Dinner: meatball stroganoff & green beans

I ended up having tilapia w/ cheese for lunch and just counting the other as snack... so no greek yogurt tonight.

protein shake
1/2 shrimp salad sandwich
1 peice grilled chicken and few bites of cole slaw & mashed potatoes (KFC)

I'm still eating wayyy more than you guys but I lost 3lbs this week so apparently what I'm eating is working so I'm going to keep at it.

Breakfast 1 costco shake 30 gram protein and 14 almonds
Snack: 1 of my kids peanut butter cracker and 1 small cute of watermelon
Lunch: Scrambled egg with cheese in a whole wheat, low carb, high fiber tortilla
Dinner: Roast Chicken and roasted carrots, onions and potatoes

Later snack:  cottage cheese and teeny salad. (so I can get my last vitamins in)
