formal dinner menu choices

I will be attending a formal dinner at the end of the month. I have to have my food choices in by the end of the day.  None of these sound health.  I will skip the appitizer  and eat salad.  What would you suggest for the entree?  I am 10 months out.

 Black Peppered Fried Broccoli (OR)
2. Fresh aromatic shrimp spring rolls

Salad

Entrees (to be selected by no later than February 16th) -
1. Vietnam's signature succulent crispy roasted chicken with garlic
2. Salmon with a mushroom cream sauce
3. Tasty tender beef with pepper and sweet onion in a delicious tangy lemon sauce
Variety of mousse desserts (to be selected at dinner)

 Number 2. salmon sounds good and you could ask them to hold or put the sauce on the side.  I'm asuming that the mushrooms would be large enough that you could take them out of the sauce.  ??

The beef looks okay too.  When something isn't  sugary, I
always figure that the amount will be so small that the small fat content will not be significant.  

Vietnam crispy chicken,  I can't tell if it will have a sweet sauce or not.  I would probably not choose that one.

Thanks.  I know they say to avoid cream, but scraping the sauce off is a good idea.

 I would do Salad..and then i just eat a small amount.. and i think that I would probably be doing the steak as you know its probably grilled..probably the one that doesn't use a lot of fat to cook it.  If you can get it with the cream sauce on the side that would be awesome otherwise enjoy.  But salmon is good for you..lol  and so is chicken but even tho it says its roasted it says its crispy roasted and i am not sure what that means.  Good luck and enjoy!!

That is what I was thinking.  Crispy roasted makes me wonder if it is fried or breaded.

I would pick the beef because I don't like salmon, but if you like Salmon pick that and scrape off the sauce.

Almost 4 years out - I can eat more salmon than I can beef. The sauce can be eaily avoided, but little of it will make the salmon easier on the pouch.
Even though salad is healthy - if I eat too much salad - I can't eat main dish.. Chew that a lot.

I don't think portion will be a problem.  I was looking at pictures on line.  the food is all very artfully presented with very small portion sizes.  I have a feeling it will be perfect for me, but all the men will be complaining.

1. Crispy usually = fried. I would pass
2. Sounds good. Cream sauce is prolly loaded with fat but considering salmon is hella dense you probably won't eat much of it
3. Beef is good but be wary of the adjective "sweet" It could simply mean they caramelized some vidalia onions or it could mean added sugar. You never know.
