What's for dinner???

I am making roast beef with potatoes and carrots. Will probably make some riced cauliflower on the side for myself to "sop up the gravy."

Here's what else I had today:

1. 1/2 slice WW bread with 1 tbsp natural PB
2. Click Frapp
3. HUGE salad with about 5 oz. grilled chicken on top

If my head calculations are right (and eerily they most of the time are), I've consumed about 780 calories so far today (not bad for four years out!), about 80g protein. Didn't have my 2nd Click so...I guess I have 120 more calories to spend???

Who knows? My dinner is likely to be about 300 and then after the gym I fully plan to have some Greek yogurt with a tbsp almond butter mixed in (so that's 200 more calories) which SHOULD land me at my self-prescribed "under 1,600 calories a day." My food log says I need 1,842 to lose two pounds a week. But LiveStrong has never met MY metabolism. Heh. My metabolism is slower than the gubment.

Anyway...what's on your plate today?

 Making a chicken stirfry with snowpeas and mushrooms.  I'm serving it with quinoa instead of rice.  
Today was a so-so day for eating.  

1. Protein Smoothie with fresh strawberries for breakfast
2. Inside of a chicken fresco soft taco from Taco Bell and a few orange wedges for lunch
3. Pork Rinds for a snack

That's it so far.  I'll probably make another smoothie for a night snack or have a quest bar to help get more proteins in.

1/3 of a Chipolte salad

Something no one else on here will have!  Last night I took out 4 saddles of frog legs, removed the top fat part (thigh if you will) and threw the bones and bottom part of the lags in a pan with onion, carrots celery, garlic, parsley and dried onion soup.  Covered that with water and let simmer for a couple of hours.  Ended up with a very delicate broth.  Then sauted onion, mushrroms, celery with garlic till tender.  Set aside, pounded the top meat between plastic till thin, shook in WW pancake mix w/ little season salt, Sauted in cast iron skillet with pan spray, hot and quick.  Sliced into slivers and stirred into vegs with strained broth and served over 1/4 cup wild rice.  Half last night, rest for dinner tonight.  Pretty fancy huh?  VERY yummy.

Snack/treat will be 1Tbsp 66% dark choc chips, 1 Tbsp dried cranberries and 1 Tbsp pistachios.  Solves the sweet/salty craving in a semi healthy way.  Lots of water and maybe a piece of chicken later for little more protein.

Left over roast pork & curried veggie mix, apple
Pure Protien bar
Crock Pot mushroom chicken

banana
8 oz low fat milk  
2 oz turkey
handful of almonds
3 slices of ham
navel orange


will probably have some air popped popcorn for snack

I made myself a chef salad and had a 1/2 cup soup to go along with it, boring but it sure was tasty!

Today

Breakfast:  Cinnamon Roll Quest protein bar

Snack:  Sugar Free caramel latte

Lunch:  sauteed spinach with garlic and mashed cauliflower with a couple of bites of Italian sausage

Snack:  iced Click...vanilla latte flavor mixed with milk

Dinner:  turkey keilbasa with a few bites of garlic mashed potatoes
