What's for dinner??? Wednesday

Ordinarily I'd be hanging out with the old ladies at church but my daughter has decided to go to "Le Dance" at school this Friday and wants a new outfit. It just so happens that she got a good report card SO...I suppose I can oblige.

Dinner will be had before we head out though. La Petite Diva (the one who is trying out vegetarianism) will have mama's curried chickpeas while La Grande Diva will have mama's beef roast with potatoes and carrots. What will Mama be having? NO IDEA!!!

Here's what else I had today:

1. 1/2 c. cottage cheese with some sf caramel syrup and a sprinkling of Cinnamon Toast Crunch on top.

2. Thai: Shrimp Pa Nang (shrimp and veggies in a sauce). Ate the rice and remembered WHY I do not eat rice. Carb comas...best sleep you'll ever get! I also had some Tom Gum soup.

Dinner is cottage pie (hamburger, onions, carrots) made with cauliflower mash on top.   I had it yesterday and will probably have it tomorrow too!   Cooking for one is such a chore ...

I'm English so this was a family staple for me growing up - I'm also a single mum and it's a very cheap meal to feed a family of 4 or me for 4 days LOL! This is a very easily digested meal once you are on solid food - the gravy from the meat mixture makes it pouch friendly.

1lb hamburger
Carrots
Large Onion
1 large potato (you can take this out if it's just for you)
Head of cauliflower

I like to leave my vegetables quite chunky. Place hamburger, carrots and onions in a saucepan and just enough water that you can see it - maybe two cups? Bring to the boil and crumble two or three stock cubes in - I add pepper but no salt - simmer for 30 minutes.

Meanwhile, peel and chop potato and cut cauliflower, add salt to taste and boil for 20 -30 minutes until fork tender - mash with a little milk and butter.

Put the cooked meat mixture into a casserole dish, spoon the cauli/pot mash over the top and drag a fork over the top of the mash (so it crisps a little on the top - yum)

Place in a 375 degree over for 45-60 minutes so the meat is bubbling and there is a nice brown tinge to the mash on top.

Bear in mind that I live at 6000 ft in Colorado so you may have to tweak the times and heat settings to work wherever you live!

You can definitely make this ahead of time and put it the oven an hour before you are ready to eat. It also freezes well.

I have started making myself eat solid foods again rather than just existing off protein shakes. Stress is a beeeyotch

B - eggface's pancake bites _ I will never make them again, ate way too many throughout the morning
L - steamed tilapia w/ provolone cheese, 1/3c english peas
S - cherry tomatos (about 3) small stalk of celery, finally made ranch dip with greek yogurt --- YUM
D - ham (deli sliced)and a cheese stick

I'll probably have a protein shake as well, since my protein will def be lacking

 I couldn't agree more Kim..  I call them pete, repeat for meals, lunch dinner and repeat. 

I had a miserable pouch day yesterday so today will likely be a soft scrambled egg with maybe some cheese and salsa.  

I had cottage cheese (85g), bran buds (1 tablespoon) and sf Jam for breakkie
Chicken Breast deli meat (50 g) with home made buffalo wing dip (blue cheese, ff ranch and Franks red hot)
Snack was 3 oz non-sweetened applesauce and a light babybel

not a bad day, probably fini**** with a shake if my protein needs to be up, but i'm on the mark to reach 60, though with all my reading maybe I need to up that to more like reaching 70 a day

My wife is making Chicken Marbella which she usually serves with couscous or brown rice, but tonight we're making quinoa using your recipe.

It's been a small pouch day for me today so all I've had thus far:

B: Greek yogurt with some granola mixed in.

Snack: One small bite of a carbquick banana bread that I made early this morning (sweetened with splenda)

L:  A faux "egg cream" (skim milk and Wais****chers diet chocolate soda).

Tonight is grilled chicken breast and veggie (brocolli/carrots) stir fry with some green/red peppers and an imitation of a General TSO's sauce.  My fiance will also get brown rice, but I usually skip that, and if I do have any, it's one small bite or I get uncomfortable.  But I love the chicken breast cubes with the veggies in the sauce.  I'm lacking protein this week.  Only getting about 55g a day, I guess I should throw the protein shake back in...thought I could go without it starting this week, apparantly not!    UGH...

Today I had the usual protein shake, yogurt, and apple slices before swimming, followed by a protein bar.  For lunch I had my first real sandwich post op...grilled ham & cheese; I used the Pepperidge Farms Very Thin wheat bread.  It took a long time to eat it, but it was OH SO YUMMY!  I am glad I fed the sandwich monster, I should be good for a few weeks!  I had my protein shake snack, and just finished dinner...Crock Pot meatloaf!  Was sooooo yummy and so tender and juicy, sitting very well.  I didn't have room for my nightly broccoli...the dogs scarfed it up tho, so no waste.  I'll have some cottage cheese in a couple hours, and then a SF popsicle or jello with my bedtime vitamins.  Everything came out to 1187 calories; 126g of protein (!!!!), 93g of complex carbs, and 35g of fat.  I always freak out at my carbs, but then I relax and realize I am getting them from Greek yogurt and fresh fruit and veggies, and I can breathe again LoL  I'm obviously not anti-carb, but I keep them as good carbs, as I work out for an hour or more M-F.
