Pancakes! (Need I say more?)

Before you say it, YES I have seen the recipe for ricottage pancakes. Me no likey! The kids don't either. Just not our "thing."

But these? Have been on our breakfast plates nearly every Saturday for the last three years. Check how I upped the protein in my pancake!

 makes me wish i liked the atkins flour. i wasted a whole bag of it other than the one time i made pancakes for me and my dad. although i didn't really doctor it up

It does take some getting used to! With the pancakes there isn't so much doctoring up the flavor, as you can see in the recipe. We just kept eating them until we were acclimated to the flavor. It was either that or no pancakes (for us - that's not everyone's choice).

The divas never minded it. I was the one who picked up on the flavor difference. But for them so long as it's slathered in syrup, I guess it didn't make a big difference.

We have made a variation of these using Soy flour, they are really good!

I enjoy me some normal pancakes on Saturdays!

I have seen a recipie for using coconut flour than sounded damn good.

My kids make themselves regular pancakes (from scratch...because they are my daughters...) every now and again. I won't eat them or prepare them (nor will I buy pancake mix) so they were sort of forced to learn how to make them from scratch and cook them.
