now this is some good yogurt!

So last night I strained some yogurt too long and got cream cheese instead of Greek yogurt, which I am gonna put some ranch mix or something in and make a veggie dip for this weekend.

But I had one more batch of yogurt so I strained it and paid more attention so it did not turn into cream cheese.  I got Greek yogurt, then added some sugar free butterscotch pudding mix, a little splenda and a splash of sugar free caramel syrup.  This is the best tasting yogurt ever!  My partner even likes it and he is not a big yogurt person at all.

Now I'm really disappointed the first batch turned into cream cheese, though.  I wish I had more of this yogurt!

 I got my new yogurt machine today so now i am itching to make it.  I will get up in the morning and make a batch or right before bed tonight.  So how does the protein in yogurt go up so drastically when its strained to make greek yogurt?  Is it because of the straining its more condensed thus your actually eating MORE yogurt??  In other words..1 cup of plain yogurt has a good amt. of liquid in it..but if you strain it through cheesecloth or coffee filters all the whey or water comes out of it and that 1 cup is now 1/2 cup.  Which now means if you eat a full cup of greek yogurt its more protein? 

I just love it with frozen strawberrys soaked in a bit of splenda then mixed with my yogurt.

Exactly, it's more condensed.  Which is why Greek yogurt is somewhat higher in calories than regular yogurt, too.

Just a word of warning.  Don't strain ALL the whey out of it.  That gives you cream cheese.  That's what I did last night.  Today I strained some for about two and a half hours and it was perfect.

kelly, i saw this receipe today and thought of you...its totally off topic here, but oh well..
its called edamane spread
2 cups shelled edamane
1/2 cup sliced onions boil these till tender, drain and reserve liquid, puree or chop in processor, and add salt pepper, olive oil and 1 tablespoon garlic to taste, add liquid if needed to help soften up...
anyhow just wanted to pass this on...

I sit a mesh strainer over a big bowl (so the liquid goes into the bowl instead of making a big mess), then line the strainer with cheese cloth.  I pour the yogurt into the strainer and stick the whole thing in the fridge for a couple hours.

The tricky part, for me, is getting the yogurt off the cheese cloth without making a big mess.  I put another big bowl right next to the bowl with the strainer. then pick up the cheese cloth and hold it over the new bowl and kind of turn it sideways so all the yogurt slides off.

Cheesecloth. Wal-Mart. 97 cents.

You put the yogurt in the cloth and hang it over a bowl to catch the liquid. I have strained already prepared yogurt but never made my own.
