oops I made cream cheese!

Last night I decided to strain my yogurt over night to make Greek yogurt.  Well, apparently it didn't need to strain for that long.  If you strain all of the whey out of it, you are left with cream cheese.  Guess what I have this morning?  I pretty big dish of cream cheese!

What on earth does one do with cream cheese other than put it on bread of some kind?  Apparently I am still getting the hang of this yogurt making business.

Make protein cheesecake? Mix some with your unstrained yogurt? Mix some lemon juice and sweetner in and call it "cheesecake"? Mix in some ranch or other herbs for a dip? And if your into cookie dough flavor somewhere I have a recipe for sugar free cookie dough dip made from chickpeas and a bit of cream cheese if you want the recipe. I haven't tried it yet.

Can you use pre-made yogurt, and if so, how do you strain it?

Yeah, you could use premade yogurt.

To strain it, I put a mesh strainer over a big bowl (so the bowl will catch all the liquid that drains out and I won't make a big mess), then line the strainer with cheesecloth.  Then I just stick the whole thing in the fridge.

I guess how long it would take to make cream cheese would depend on how thick the yogurt was to begin with.  Mine took about 6.5 hours.

I am so excited to hear this.  I can't remember the nutritional values of cream cheese, but this is the taste w/o the fat and calories - right?  I eat ff fage.  I have been wanting beef stroganoff...was wondering if I could get the same taste with shirataki noodles?  I've got to work on that.

Well, if you use fat free yogurt you'd have fat free cream cheese.  It would still have calories, though.

True...but I don't care for the taste of low fat creame cheese...but love FF Fage, so I'm hoping it will be worth the effort.

You can add cream cheese to your cooking!  When I make mash potatoes, it has to have cream cheese!

Silly question, but does the whey that you drain off contain a portion of the protein total listed? After all, our protein powders are whey protein... Anybody know?
