Help me out....cuz this sounds like wayyy too much food. In terms of volume I didn't eat that much more before WLS but...lower calories, less fat and more protein. It's within the guidlines. In fact the nut would tell me to add more veggies.
Here it is!
Breakfast: Muscle Milk light with added unflavored protein powder and ice.
Morning snack: 1/2 protein bar and clementine orange
Lunch: Chicken Salad (chicken breast, reduced fat mayo, walnuts, minced onions) and a few fiber select crackers
Afternoon Snack: 1 oz cheese, a few fiber select crackers and 2 strawberries
Dinner: Taco Salad (steak, salsa, cheese, sour cream, lettuce) and 15 grapes
So am I doomed to be fat forever? I swear it seems like wayyyyy too much food.

Of course you're not doomed!
And only you can say whether that is too much or not (well you and your NUT). Are you eating your protein first? How do you feel after you eat your protein? I see you incorporate it into every meal and snack and from the way you listed it the protein comes first, then everything else.
The only thing I'd be worried about is if I thought you were force feeding yourself the "everything else." But if not...I don't think your plan looks bad at all, so long as you're cleared to eat all the foods you're eating.
I would, however, caution you about eating a whole bunch of high glycemic fruits in one day, unless you are exercising some time after it. They tend to do the blood sugar tango in your system, which can create wonkiness down the line. I believe both oranges and grapes are pretty high glycemic fruits. But I'm even hesitant to say that.
What it all boils down to is that you're eating healthfully. So...??? I got nothin' else!
