If it were National Shrimp Day I would say that...cuz you can afford shrimp and I cannot...because I spend all my money on...PEANUT BUTTER!!!!

I wonder if Obama will shout out PB in the State of the Union address tonight? ;)

  i found out on my way home. i was kinda bummed. i'm sure peanut butter & co had some good specials! (have you ever had their pb nik? it's amaaaaaaaazing!)

I have and I agree. It's GOOD!

I actually make my own PB flavors too. The kids think I am wacky like that but I love a good coconut curry PB, I've done a spicy PB, chipotle PB (which is very, very good with a very sweet fruit preserves on a whole wheat cracker! I've used apricot so far!).

I love me some peanut butter!

Coconut curry peanut butter?  Oh lordy, does that sound divine.... did it live up to the expectation?

It did and is SO easy to make:

I get fresh ground PB. I usually flavor up about a 1/2 c. at a time. I added to this mix:

2 tbsp lite coconut milk (made this at the same time as making a batch of curried chickpeas for lunches)
a few pumps sf toasted coconut syrup (I think it was Torani) just to reinforce the flavor
1 heaping tbsp curry powder
A few drops of lime juice

A heaping tablespoon of that, along with some Greek yogurt, make a very nice chicken salad.
