yummy gooey cheesey lunch

And no, I did not have pizza.

I sliced a tomato and put shredded mozzarella cheese on top of the slices, then stuck them in the oven for a few minutes, until the cheese started to melt.  Then I turned on the broiler for a few minutes, so the cheese got bubbly and brown.

Then I ate it.  And fended off the cat, who things I should share all things cheesey with her.  It was yummy and gooey and cheesey, and also very quick and easy to fix.  And no starchy carbs.

I too love this...I add some italian seasoning and garlic for added flavor and then sprinkle with fresh parmesean as soon as I remove it from the oven.

Caprese is exactly what I do! A slice of fresh mozzarella, a slice of fresh tomato, a fresh basil leaf, salt and pepper and a drop or two of EVOO - delish!!

Sounds great, but I wonder what people's experiences with tomato is like. I've heard that they are too acidic for newbies.

I haven't refrained from ketchup on my eggs, but at six weeks, salsa still scares me a bit. Anyone want to share their experiences? Am I over-cautious?

Fresh tomato was not a problem for me.  Commercially prepared tomato products have a large amount of sugar and I found it to be a near dumping amount of sugar early out.

As for spicy, I was eating hot sauces and salsa on my refried beans at the pureed stage.........but then I adore hot and spicy and tolerate it quite well.

 i ate them pretty soon after surgery. they have always been one of my favorite things to eat
