New year, fresh start!

'Cept I still had a moment today...ah, well. I start afresh again!

1. Something I am terming a "lasomelette" (lasgana + omelette): egg white omelette stuffed with a combo of pureed cottage cheese and parm cheese with diced turkey smoked sausage, onions and baby spinach, topped with spaghetti sauce.

2. A biscuit with some of my homemade country gravy (oops)

3. Triple berry smoothie

Not sure about dinner. Probably taco casserole since I'm making it for my lunches this week.

 It's an eggy-kind of new year for me too! Since I have the day off, I'm focusing on protein from foods. Shakes will have their place tomorrow when I go back to work. Ugh.

B- scrambled egg whites with spinach & cheese
S- chocolate greek yogurt (s/f)
L- beef roast

 b- 3/4 c chocolate lucky charms. certainly not the best choice, but not the worst either.
 l - 1 slice of bread, 2 slices of fresh mozzarella, 2 slices of bacon (weird combo, but delicious)
 s - fiber one "brownie" (first one i've tried, not crazy about it but it filled me up for 90 cals)
 d - not sure yet. everything i want requires sauce and making a pot would take me a few hours and i don't feel like it 
 s - maybe protein hot chocolate?

Pre-op liquid diet, Day 6.

Breakfast: Click Mocha protein powder with skim milk
Lunch: Chicken broth with unflavored protein powder and herbs
Dinner: Probably skim milk with ice and vanilla protein powder and flavoring (mint or orange extract)

In between, SF Jello, tea, flavored water...

Yes, I AM sloshing out my eyeballs.

I went to the grocery store and found myself being d-r-a-w-n to the freshly-baked french bread.  "No, woman!" I berated myself.  "Jello!  You may have Jello!"

 Happy New Year....may the new year bring to you great health, joy and happiness.  May you always know love.

My husband slept in this morning so I curled up with a book and a vanilla almond quest protein bar in the sunshine...nice relaxing morning.  We know have more unpacked than packed...just a handful of boxes in the basement left.  

snack...homemade sugar free caramel latte

lunch....chili cheese dip with a few baked tortilla chips...made if for the football games

dinner....crockpot concoction of chicken thighs, turkey sausage, garlic, hot salsa, peppers, onions, black eyed peas...for New Year'sDay....simmered all day and then melt in some low fat cream cheese.  I will have it as is and my husband will have it over garlic mashed potatoes

Are you using turkey sausage links? And are the black eyed peas canned? I want to make this next weekend. I already have frozen boneless skinless thighs in my freezer.

 I used:

2 packages boneless skinless chicken thighs
1 package jimmy dean's cooked crumbled turkey sausage
2 onions sliced
1/2 package of frozen roasted red peppers but you could use one chopped fresh one
1 jar of green salsa or sometimes two cans of rotelle tomatoes...one is usually the one with lime juice
1 T chopped garlic
2 bay leaves
1/2 t of fennel seeds
1 t oregano
1 t of smoked paprika
1/2 cup of white wine...or chicken broth but I had some wine in the fridge
1/2 a frozen bag of black eyed peas, black beans, peppers and onion but you could use a can of drained black eyed peas
simmer all day on low in the crockpot
add one brick of low fat cream cheese and let sit half an hour to melt...stir well and enjoy

My husband loves it and it has really good flavors.  I either serve it over brown rice or mashed potatoes for him and I will have it by itself.
