pistachios?

Someone gave my partner a bunch of pistachios.  I mean, three BIG bags of them.  Anyone got any ideas about what to do with a bunch of pistachios?  Other than just shell them and eat them, I mean?  Any good recipes?  Can I roast them and put seasoning on them or anything like that?  They don't taste bad but they are kind of boring and I have THREE BAGS of them.  LOL

Oh I love them have not tried them after surgery "31/2 weeks out" hope I can eat them soon.

You could use them in low carb icecream,pudding and muffins.

Not sure about specific recipies...although I'd enjoy looking up internet recipes (avid googler)...am I mistaken, isn't there a pisachio puddling? (yes I mean the jello type), wonder if there is some way to incorporate that into maybe greek yogurt/protein to make a healtheir and protein packed "pudding"...the pudding is the only thing I've ever heard using pisachios...

Yeah, there is.  How about Greek yogurt with pistachio pudding mix, a little splenda, some chopped pistachios and some cherries?  I love playing with Greek yogurt.

 I just shell them and eat them...love them.  I don't eat them at this point...but maybe someday

Ok this is the Foodie in me talking...but I think they would make a nice pesto instead of pine nuts. Different flavor, so maybe you could make a spicy pistachio pesto. But the creaminess of the nut when it grinds up, I imagine, would be nice.
