In any cookie recipe extracts would always be optional. The non-optional parts of a cookie tend to be in the ratios of things to one another (how much flour:baking soda:eggs, etc.)

The butter extract sort of saves it from being too sweet. Throw a bigger pinch of salt in and it should be fine!

 Those are so pretty.
We are making krensakaka (I pretty sure that word won't be on spell check) It's a Norwegian food we make for Christmas. It's almond flour (ground up almonds + powdered sugar). It's cooked and then rolled into snakes shapes an put in round molds. Then they are stacked like a Christmas tree. They taste like biscotti. Everyone in my family loves them so I don't have to worry about them being around long.
I might make some of these with some leftover almond flour and butter.
