Gas is likely to be an issue for a LONG time.  Buy some Devrom (probably online, as I've not seen it in stores) or get some Ozium spray.  My wife had an early gastric surgery in 1980 for wt loss.  It came with gas so bad "it could peel wallpaper".  Ozium is used in many facilities like hospitals, rest homes, etc. It works well to kill the gas odor. It comes in 8/10 oz (purse size), 3 1/2 oz and 14 oz cans.  3 1/2 oz cans would be good for small offices and the larger cans for your home.  DAVE

Green beans, spinach, and kale don't cause much gas. Also lettuce and tomatoes. Carrots and summer and winter squash. Mushrooms, pumpkin, eggplant. Bok choy cooked in tomato sauce with garlic and oregano, then pureed smooth as a soup. Roasted fennel with carrots, salted and pureed or mashed when soft is great, and low gas.
For Christmas, look up pumpkin fluff online, it's very good. The bok choy soup would be a great appetizer for anyone. Add a little veggie, chicken or beef stock.
Cook your green beans to the very soft stage and add some onion flakes. Eggplant seasoned then sprayed with an olive oil spray and baked to super soft will be tasty, but mushy!
Good luck with everything.
