Protein Sweet Potato Pie, anyone?

Yes, yes...I know what some of you are going to say. "I am a pumpkin pie person!!!"

And for  you there are a plethora of recipes out there guiding you in the right direction. For my sweet potato loving folks, there is not so much, which is why I made up some protein sweet potato pie this weekend (tester batch) and had the BIGGEST skeptic in my family test it. By virtue of the fact that I am a Bariatric Foodie, my stepdad knew I did SOMETHING to the pie...but by taste he could not figure out exactly what.

And he liked it (warm from the oven with cool, bubbly whippage as show). That sounds like an ensorsement to me! Check out the recipe on Bariatric Foodie!

Nik, thanks for this recipe!! I have a few questions...

1. How long do you boil your potatoes? Like until they are fork soft (like when you make mashed potatoes)?

2. I bought pie crusts (why must they come in 2 packs?) and I was wondering if you pre-bake your crusts or just thaw and fill and bake all together?

1. Yes, until fork soft so that they are mashable.

2. This is a case where there is probably a difference in what you SHOULD do vs. what I actually do. I don't thaw or pre-bake. I just fill and bake, but I do cover the outer edge (the crinkly part around the edge) so it doesn't burn then I uncover it only for the last few minutes of baking. My crust comes out well cooked. But then I have a super-erratic psycho oven so do whatever you would do with a regular pie crust (or follow the directions on the packaging).
