Open a can (or two... or three...), drain and rinse.  Preheat the over to 400 degrees.  Put a kitchen towel on a baking sheet spread the chickpeas out on the towel, and put another towel on top.  Pat them dry.  Remove the towels, drizzle the chickpeas with a little olive oil, stir them up, and spread them out flat on the baking sheet.

Bake for 30-40 minutes, stirring once or twice.  They should be crispy when done.  Sprinkle with salt and any other seasonings.  I've been using this Creole seasoning I bought for something, can't remember what.  But it tastes great on the chickpeas.

Eat.  Fart.  Enjoy.

I had the same problem!!  When I saw how many calories they were I was kind of shocked.  They seem a little high in calories don't you think?  Or do you just have 1/4 cup.

No, I certainly don't have just 1/4 cup!  I guess I don't worry about the calories in them because, one, they are a healthy food with lots of protein, and two, if I have chickpeas with more calories for one snack I'll have yogurt with just 100 calories for another snack so I figure it all balances out.

Hey Kelly...my nut told me I hafta add 1/4 cup of legumes to my diet DAILY and I was getting so sick of beans, until I remembered about your roasted chick peas! :D So, I made some last night and love them! I think next time I need to roast them a little longer, but they are super good (I seasoned them with a little itallian dressing mix powder...wowzers! YUMO). My only question is where/how do you store them? I know you said you munch 'em up, but in the event there were any leftovers (lol) where WOULD you store 'em? Fridge or pantry? Thanks!

I would put them in an airtight container in the pantry, not the fridge.  And make sure they are completely cool before you put them away.  I initially tried making a big batch, thinking then I would save some to eat later.  But they did not taste as good as  they do fresh out of the oven.  Maybe I didn't let them cool all the way, but I thought I did.  But they did not stay crunchy.

Ok great! I loved them, they were just sooo good. And I like that you can make them a variety of flavors. I even read a few sweeter recipes with cinnamon and splenda! (Churro chick peas?! LOL) I did read that dry roasting (with no oil) and then adding the olive oil (with seasoning) AFTER roasting (while hot so they still absorb everything) does help them stay crunchy longer (they said the "why" but of course i can't remember that right now lol). I think I will try it both ways and see which way keeps 'em crunchiest! I initially put them in the fridge, because I wasn't sure, and that did make them get soggyish. So I was hoping storing them out of the fridge would be ok! Anyway, thanks!

I was just thinking of doing them with cinnamon and sugar last night when I made some.  I didn't try it, I was in the mood for something salty then, but the idea crossed my mind.  If you try that, let me know how it goes.
