day two of cutting the carbs

Yesterday was the first day of my week without refined carbs (except protein bars, 'cause well, I  make the rules) and I got off to a less-than-stellar start because I had planned to go grocery shopping the night before but my car is possessed by evil spirits and only runs part of the time.  So I didn't get to the store until yesterday evening so yesterday morning I ate popcorn for breakfast.  Yes, I know... but hey, what do you eat when you're out of food in the house?

Anyway, then I got to the store and the rest of the day I ate a protein bar, some Greek yogurt and a whole bunch of roasted chickpeas.  Which are delicious but they are less good the second day.  They are best fresh out of the oven.  I had some leftover and ate one this morning and it seemed kinda greasy and just not so good.  Maybe I used too much oil but they tasted great last night.

Anyway.  Today I had a protein bar for breakfast and I've gonna have some Greek yogurt later.  I don't know what I'm having for dinner.  Oh.  Beans, I think.  I'm not craving carbs at all, either.

Do you make the chickpeas yourself from canned ones?

I'd love to know how you did it.

Yes.  You drain them and rinse them.  Spread a dish towel on a cookie sheet, spread the chickpeas out on the towel, cover with a second towel and pat dry.  Then remove the towels, drizzle with olive oil, stir them up and spread them out in a single layer.  You can make a couple cans at a time.  They are so yummy it's hard to quit eating them.

Bake at 400 degrees.  The recipe said to bake for 30-40 minutes.  The first time I made them I did 30 minutes and there were some that weren't as crunchy as I like them so last night I did 35 minutes and a few on one end of my baking sheet got burnt.  I guess you gotta watch them closely.  I did stir them up halfway through baking.

Then take them out of the oven and sprinkle with salt and any other seasonings you like.  I used some Creole seasoning that was in my cupboard for some reason.  I can't remember what I even bought it for.  But it worked well.  I want to try some with garlic powder and parmesan, too.

Those sound delicious. I'm gonna have to try making some. Of course not today since all I can have today is clear liquids and yucky bowel prep stuff...grrrr I wanna eat so bad.

I did some of these last week.  When I stirred them, some of them blew up!  Popped and flew right out of the oven at me!  I wonder if I didn't get them dry enough or something?  They were tasty...but violent little critters.

Kelly, I just want to say that I love reading your posts.  You are so knowledgeable and have great advice.  I am going to try the chickpeas!

Way to go on ""de-carbifying" yourself!  I just took a batch of roasted garbanzos out of the oven.  I dry roasted them for 30 minutes (no oil) so more of the moisture would be released and then tossed them in olive oil, salt and spices and returned to the oven for another 10 minutes or so.  Yum!  This time I used salt, garlic powder, onion powder, chili powder and cayenne.  Mmmmm!

I seem to be able to go back and forth with carbs with not much issue. 

I did some chick peas a couple of days ago.  Mine were also best right out of the oven.  I didn't get them quite crunch enough so I'm going to slide them back in the oven to warm them up and crunch them up too, I hope.
