pumpkin spice protein latte

OMG, this is good.  I have been so into protein lattes lately.  Today at the grocery store I walked by the spice aisle and decided I needed some pumpkin pie spice.  So here it is.

I heat about eight ounces of water in the microwave in a big mug, and while that's heating, mix some vanilla protein powder with soy milk in a small cup.  Enough soy milk that I get a paste that's that super thick.  Then that gets stirred into the warm water, along with a spoonful of decaf instant coffee, a little splenda and a shake of pumpkin pie spice.  And some Mirilax and Upcal D, but those ingredients are optional.

Yum. 

Also... anyone else feel like a mad scientisit in the kitchen mixing up these protein drinks?  It's measuring out all the different powders - protein, instant coffee, splenda, pumpkin pie spice, Mirilax, Upcal D... I need an extra big mug so I can add all that stuff to it.

I too have been experimenting with pumpkin puree and pumpkin spice.. I want to bake a pumpkin custard...I love pumpkin pie.. Trying to figure out a way to make taste good and be high protein..

I haven't run the stats on it.  But here is how I make pumpkin pie:

1 can of pumpkin
1 lg. can of evaporated milk
2 large eggs
1/4 to 1/2 tsp of salt
2 teaspoons pumpkin pie spice
1 tablespoon of sugar in a measuring cup then add to the 3/4 cup mark with splenda

Spray a ceramic pie dish with pan spray

Pour in pumpkin mix grate nutmeg on top

Bake 40 minutes at 350

Kelly didn't you post a Pumpkin for Breakfast Recipe just recently? I would love to have it.  I have been trying, unsucessfully to find it.  

I have also been craving pumpkin and apples.  Check out the Bariatric Foodie Website for a good pumpkin custard recipe.  Here's an Apple Crisp Recipe that I came up with, AWESOME! 
8 large apples, peeled and sliced and tossed with Splenda &     Cinnamon ~ Place in a sprayed 10x10 ish baking dish.  Mix together 1/2 cup old fashioned oats, 1/2 cup Splenda Brown Sugar, 1/4 cup finely crushed nuts and just enough SF Maple Syrup to moisten.  ~ Sprinkle on top of apples. ~ Bake at 375 till apples are tender and topping is crisp.  OMG!!!!

Yeah, it was pumpkin cheesecake.  Greek yogurt, sugar free cheesecake flavor pudding mix, pumpkin puree, a little Splenda.  Topped with Cool  Whip free and a sprinkle of cinnamon and nutmeg.  Yum.
