Pumpkin cheesecake for breakfast!

Why yes, I am just eating breakfast now at almost 3 pm.  What can I say?  I slept until noon and then I had to run some errands, including going to the grocery store.  And yes, I was starving.

But... I am eating pumpkin cheesecake!  

This is not really my own original idea.  Someone posted something similar the other day and I thought I had to make some.

I used a 16 ounce container of plain Greek yogurt, added half a package of sugar free cheesecake flavor pudding mix, a couple heaping tablespoons of pumpkin puree, a spoonful of splenda and a little caramel sugry free syrup.  I put some back in the fridge for later, then topped my portion with cool whip free and a sprinkle of cinnamon and nutmeg.  Yum yum yum.  I'm gonna wish I'd bought more Greek yogurt.

I wrote that recipe down when I saw it last week and was going to try it. I hadn't even thought of topping it with a little cool whip free.  Duh.  Well tonight is market night so I am picking up the fixin's.

Oh, the Cool Whip makes it really yummy.  Definitely get some.

I used Kroger brand Greek yogurt for this because it's cheaper than most other brands and I am sort of short of cash for the rest of the month.  I like Fage better but with the pumpkin and everything mixed in, the Kroger brand yogurt was fine.

 Whatever you do.. dont' put nutmeg in it :(  I messed up a 16oz container putting nutmeg in it.. :(  I don't have the heart to dump it but I probably will.

I did put a sprinkle of nutmeg on mine.  But really just a very light sprinkle.  Cloves might mess it up.  I imagine too much nutmeg would, too.

Do you think you could save it by adding more yogurt?  Kind of dilute the flavor?  Although if that didn't work then you'd just be wasting even more yogurt.

Well, last week I ruined a huge batch of it by putting Truvia in it.

It is sitting in the back of the fridge waiting to be pitched tonight for trash night. IDK why but, I felt the need to add 4 packets without even tasting it. When I tasted it, it tasted all chemically (yes, I just made that word up) I could have cried b/c I sent dh to the store specifically to make that. I don't usually EVER add Truvia to my greek yogurt concoctions, so I don't know why I felt the need to. My lips actually started tingling after tasting it. Anyone need any Truvia??

 I use Truvia in mine all the time, but I add it sparingly and taste it as I go..if I want it a little more sweet I put another little sprinkle, mix and taste again.

Hi Kelly.  How much of it can you eat in one setting ? do you know the calorie,fat content?  thanks!

Well, one cup of the Greek yogurt had 150 calories.  I don't know how many calories were in the pumpkin puree.  OK, I don't know that stats at all really.  I get a headache trying to figure this stuff out.

All right, I got off my butt and went into the kitchen to look at the containers for this info.

I used two cups of Greek yogurt, 150 calories per one cup serving so 300 calories for two, no fat, 23 grams protein per serving for 46 grams altogether.

Pumpkin puree has 50 calories, no fat and two grams protein per half cup serving.  I probably used about that  much.

The cheesecake pudding mix had 50 calories for half the box, no fat and no protein.

So the whole thing was about 400 calories, no fat, 48 grams of protein.  I probably ate about 1/3 of it.  And I topped that with some cool whip free, which has 15 calories per serving and no fat.  Wow, so that was like a 150 calorie breakfast with 16 grams of protein.  And it was a good serving size and filling.

Now I'm glad I figured it out!
