roasted chickpeas - yum!

Someone suggested this to me recently as a good protein snack.  I need to go grocery shopping tomorrow and did not have much around here to eat tonight but then I remembered I bought these last week at the store.

Here's what you need:

one can garbanzo beans (or more - I made two cans and we ate almost all of them)
olive oil
salt
other seasoning if desired

Drain the garbanzo beans and rinse them.  Spread them on a towel and cover without another towel to soak up as much liquid as possible.

Spread them in a single layer on a baking sheet. 

Drizzle with olive oil and stir them around.

Bake at 400 degrees for 30 minutes, stirring once or twice during the cooking process.

Sprinkle with salt and other seasoning as desired.  I had some creole seasoning left over from something I made a long time ago.  It worked great.

They are a delicious crunchy salty snack and full of protein!

It's my new favorite.  When I start wanting crackers and chips and stuff, these will be just perfect.  You get that crunch, that salt.  yum

Interesting.  Chickpeas are about my least favorite bean although I like hummus.  This sounds good.  I have some roasted soybeans but they are so high in calories you can only eat like 1/8c.  They have the crunch and salt but the flavor isn't to die for.

Mmmm... I just love love love chickpeas.  I quick eating meat about 8 mos ago and have learned some pretty creative things with these like making them into a "tuna" salad... delicious!! 

You just mash them with a fork or pulse them in a chopper... leaving them a little chunky, then add your favorite "tuna" salad items such as chopped celery, onions, mayo and to make it a bit more "tuna" flavored  I add 1/2-1 tsp of soy sauce... so yummy on either whole wheat crackers or toast :)

Thanks for the idea.  I'd never heard of that.  I don't eat meat either and I don't really miss tuna salad, I never was a big fan, but I do like egg salad and this sounds like I might like it.
