Protein rich side dishes PLEASE?

 I love corn so much but it isn't really good for anything. SO what side dishes do you eat?? I would love to find side dishes with protein, even if it is just a little bit. I always feel better when I know stuff has protein in it.

Also...I hate brocolli. Any brocolli suggestions will be ignored.

I seldom eat side dishes.  I get full on my entree.  However, I do eat a small amount of veggies on the side sometimes.  Or a small amount of fruit.

As far as side dishes with protein, how about beans?  Cooked veggies with melted cheese?  Cottage cheese?  If you love corn, how about serving a side dish of corn mixed with black beans?

 Have you tried Nik's cheese and cauliflower bake?  I love this, and so do my kids.  Its a great substitution for mac and cheese.

Also like any kind of beans.... had lima beans last night made in the crock pot with some ham,  black beans with a little salsa and cheese are one of my favorites.  Another one of our favorites is toasted chick peas in the oven ... bake them until they are crunchy on the outside and creamy on the inside.

At what temp do you toast the chick peas and for how long? I've tried doing this b4 and the outside never toasted

 Here is the recipe I use:

  • 1 (12 ounce) can chickpeas (garbanzo beans), drained
  • 2 tablespoons olive oil
  • sea salt 
  • garlic powder
  • cayenne pepper (optional)
 

Directions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Blot chickpeas with a paper towel to dry them. In a bowl, toss chickpeas with olive oil, and season to taste with salt, garlic salt, and cayenne pepper, if using. Spread on a baking sheet, and bake for 30 to 40 minutes, until browned and crunchy. Watch carefully the last few minutes to avoid burning.

 I hope you like them as much as me and my family!  I have some in the oven right now!  I usually double the recipe, as everyone in my family likes to munch on them!
