What's for Sunday dinner?
I made a beautiful salad with fresh spinach, chopped red, yellow, and orange peppers, sliced plum tomatoes, red onion, and diced deli turkey. I topped it with sodium free salad seasoning and fat free caesar dressing. It was gorgeous and.......I could only eat like 3 bites. Small pouch day, I guess.
I have been eating a version of this ) salad every day (sometimes twice a day) for several weeks and I love it. I can normally eat quite a bit since the base is spinach, but not today. Oh well....

Usually lasts a week which is just in time for me to fuel for my half marathon on the Oct. 2nd and then I will bed completely screwed again.

I took a big pack of bone in pork chops and put them in the crock pot with beer and cajun spices, let it cook all night and then after shredding and taking the bones out, threw in some Sweet Baby Ray's for yummy flavor
so my boys had pulled pork sandwiches with Au gratin potatoes as a side dish.
I mushed up the pork and potatoes since I'm still on puree and enjoyed it too!
Since I had my surgery, I've been making creative meals for my husband and son, its weird, I cook it, I love to cook, but I'm okay not eating it.
This week alone I made them
Caramel Apple pancakes with maple sausage and fried taters
Deer steaks wrapped in bacon and fried, green beans and cheesy potatoes with sour cream and bacon in them
Chicken Parmesan with rigatoni and sauce
My son keeps telling me I'm the bomb with the meals. I just returned to work so I told him don't get used to it!
